Step:

1.First, we need to prepare green and red chili peppers and onions, and cut them into sections. The length of the sections can be determined according to personal taste preferences. Next, we need to handle the pork ribs. Please wash the ribs thoroughly, ensuring there are no remaining blood or impurities. Then, cut the ribs into small sections about five centimeters long and place them in a plate for later use. This size is suitable for better flavor absorption during stewing.

2.Place the pot on the stove, add enough cold water, and add some ginger slices and cooking wine to the pot. Then, place the cut ribs in the pot. Turn the heat to medium-high and continue boiling for 2-3 minutes once the water begins to boil. After this time, you can use a slotted spoon to lift the ribs out of the water and rinse them. This step helps remove impurities and blood from the surface of the ribs, making them cleaner. Once the ribs are rinsed, you can prepare for the next step of the cooking process.

3.Heat an appropriate amount of oil in the pot, then add ginger slices and garlic slices to stir-fry until fragrant.
