Celery one
Egg three
Salt 6g
Wood ear fungus 7g
Sugar 4g
Carrot one
Garlic 4g
Green onion 3g
Flour 4g
Edible oil 15g

Steps:

1.Today, I will share a recipe for Stir-Fried Celery with Eggs. The celery is crispy, tender, and flavorful. First, remove the leaves from the celery. We all know that celery is rich in dietary fiber and minerals, which are very beneficial for our bodies. After cleaning the celery, cut it in half lengthwise with a knife to enhance the flavor. Then, cut it into approximately 3 cm long pieces. Put all the celery in a large bowl and add a small spoonful of salt. Mix well. Marinating the celery with salt will make it more crispy and tender. After thorough mixing, set it aside for ten minutes.

2.Next, prepare a small bowl. Add a handful of black fungus (wood ear mushrooms) and a little sugar. Then, add some warm water. Adding sugar will help the black fungus soften quickly. Set it aside for now. Then, prepare a carrot. Use a peeler to remove the skin. After peeling, cut off the head and tail. Then, cut it into approximately 5 cm long pieces. Next, cut it into thin slices, and finally, cut the slices into thick strips. Put the prepared carrot in a bowl and set it aside. Slice a few cloves of garlic and a piece of spring onion diagonally. Set them aside on a plate.

3.By now, the celery has been marinated and released a lot of water. Add some clean water into the bowl to wash the celery and remove any excess salt. Marinating the celery like this will make it more crisp and refreshing. After washing, remove the excess water and set the celery aside.

4.After soaking the black fungus, add a spoonful of flour and mix well. Adding flour can absorb any dust or impurities on the surface of the black fungus, making it cleaner. After washing with clean water several times, the black fungus will be very clean. Put the cleaned black fungus into a bowl and set it aside.

5.Next, prepare another small bowl. Crack three eggs into the bowl. Add a few drops of white vinegar to remove any fishy smell. Mix well with chopsticks until the egg mixture is uniform and there are no solid egg parts left. Heat another pan, add a little cooking oil, and wait for it to heat up. Pour the beaten eggs into the pan and let them slowly solidify without flipping them right away. Once the eggs are set, use a spatula to break them apart into large pieces. Cook until the eggs are fully cooked. Remove from heat and set them aside on a plate.

6.Bring a pot of water to a boil. Add a spoonful of salt to the boiling water. Blanch the black fungus and carrots in the water for about a minute, then remove and drain. Put them in a bowl and set them aside.

7.Heat another pan, add a little cooking oil, and stir-fry the spring onion and garlic until fragrant. Then, add the celery and stir-fry for about a minute until slightly cooked. Add the black fungus and carrots, continue stirring evenly. After stirring evenly, season with a small spoonful of salt and some chicken bouillon. Continue stirring with a spatula. As celery itself has a sweet and aromatic flavor, we don’t need to add other seasonings. Finally, add the cooked eggs and stir-fry briefly. Cook for about five to eight more flips, then remove from heat and transfer to a plate. The delicious Stir-Fried Celery with Eggs is ready to serve. The dish is not only nutritious but also visually appealing, increasing your appetite.
