Steps:
1.Prepare the necessary ingredients and wash them thoroughly. Use flour and salt to clean the mushrooms more effectively.
2.Cut the tofu into square-shaped slices, slightly thicker but not too thin. Place them on a plate and set aside.
3.Prepare some pork belly, remove the skin, and slice it. Slice the mushrooms thinly as well. Cut the ginger and garlic into slices and chop the green onions into segments. Place them all on a plate.
4.Prepare a sauce: In a bowl, mix together light soy sauce, dark soy sauce, oyster sauce, pepper, a little sugar, and three tablespoons of water. Stir until well combined.
5.Heat some cooking oil in a pan. When the oil is about 70% hot, sprinkle some salt and then fry the tofu. Once one side turns golden brown, flip it over and fry the other side until golden brown as well.
6.Once both sides are golden and crispy, remove the tofu from the pan.
7.In another pot, heat some cooking oil. Add the sliced pork belly and stir-fry it until it becomes slightly smaller and releases its fat.
8.Once the meat has shrunk a bit and the fat has rendered, add the chopped onions, ginger, and garlic to the pot and sauté until fragrant.
9.Then add the sliced mushrooms and stir-fry for 30 seconds. Arrange the fried tofu neatly in the pot and pour in the prepared sauce. Add some water and cover the pot. Cook over low heat for 6 minutes.
10.Finally, garnish with chopped green onions and cilantro. The dish is now ready to be served.

1.When cleaning the mushrooms, use salt and flour. Salt helps kill bacteria, while flour has strong adsorption power, effectively cleaning any impurities inside the mushrooms.
2.Avoid stir-frying the tofu as it can easily break apart.
