Pig trotter material:

Pork Trotter two
Soybean 200g
Ginger one
Bell pepper one
Chili pepper one
Dried chilli 8g
Fragrant leaves 2g
Cinnamon bark 3g
Cooking wine 5ml
Edible oil 10ml
Star anise 3g
Salt 3g
Oyster sauce 3ml
Soy sauce 3ml
Rock sugar 10g

Step:

1.Prepare the required ingredients. Clean and cut the pig’s trotter into sections, cut the green and red peppers into sections, slice the ginger, and soak the soybeans in water overnight in advance.

2.Fill a pot with cold water and add the pork trotters. Add a splash of cooking wine and bring it to a boil over high heat to simmer.

3.Once the pork trotters have simmered and the blood has been removed, remove them from the pot and rinse them with cold water. This step helps to give the pork trotters a firmer texture after stewing.

4.Heat some oil in the pot, then add ginger, star anise, and bay leaves to sauté until fragrant. Once fragrant, add the pork trotters into the pot.

5.After sautéing the pork trotters,add dried chili peppers and rock sugar to enhance their color and make them more appetizing.

6.Once the pork trotters have turned slightly yellow, add purified water to the pot. After simmering, add dark soy sauce, light soy sauce, and the soaked soybeans to the mixture.

7.Once the water comes to a boil, add salt to season. Then transfer everything into a pressure cooker and cook for 14 minutes.

8.After cooking in the pressure cooker, transfer the contents back to a regular pot and cook over high heat to reduce the sauce. Add the green and red bell peppers and continue to simmer.

9.Once the sauce has thickened to your desired consistency, turn off the heat and transfer the dish to a serving plate.
