Braised Pork Belly with Tofu, a mouth-watering delicacy that makes one’s mouth water. Its appeal lies not only in its rich texture and unique flavor, but also in the shallow-to-deep story it tells and the emotions it contains. Braised Pork Belly with Tofu, with its golden color and delicate aroma of meat and tofu, is a dish where the soft and melt-in-your-mouth tofu perfectly complements the perfectly cooked pork belly, which is fatty but not greasy. The combination of the two ingredients gives this dish a lingering and satisfying sensation. In the process of making this dish, we can see that every step is crucial. When choosing pork belly, it’s best to select a cut with an appropriate ratio of lean meat to fat, as this will result in more delicious braised tofu. The choice of tofu is equally important – it’s best to use tender tofu, as this will give the dish a finer texture. The mastery of cooking time and temperature is also crucial; only by achieving the right heat can the pork belly and tofu blend harmoniously together.

Pork belly with tofu ingredients:

tofu one
Chili pepper one
Celery 200g
Streaky pork 100g
Bell pepper one
Onion 3ml
Garlic 5g
chilli paste 20g
Essence of chicken 3g
Dark soy sauce 3g
Oyster sauce 5g

Step:

1.After cleaning the tofu, cut it into slices approximately 1 centimeter thick.

2.Prepare 200g of celery, cut into sections, and set aside on a plate.

3.Slice the green and red bell peppers into thin strips. Cut the pork belly into thin slices approximately 3 centimeters in size. Mince the garlic and set aside for later use.

4.Slice the onion into thin strips along the grain and place them in the bottom of a small pot as a base.

5.Heat oil in a wok or frying pan to a temperature of 150 degrees Celsius. Carefully add the tofu into the hot oil and fry until golden brown. Remove the fried tofu from the oil and set it aside. The tofu will have a crispy outer texture and tender interior, providing an excellent mouthfeel.

6.In another pan, heat oil until hot. Add the sliced pork belly and stir-fry until it becomes fragrant. Once the pork belly releases its aroma, add the minced garlic and continue to stir-fry.

7.Add chili sauce to the pan and stir-fry until it creates a red oil. Then, add the sliced green and red bell peppers along with the celery, and stir-fry until everything is evenly coated and cooked.

8.Add the fried tofu to the pan and pour in 50ml of hot water. Stir-fry until the sauce thickens. Then, add chicken bouillon, dark soy sauce, and oyster sauce for seasoning.

9.Turn up the heat and stir-fry to reduce the sauce until it thickens. Transfer the stir-fried tofu into the pot with the onions as a base. The dish is now ready to be served. Enjoy!

 

Tips:

  1. Choosing the right pork belly: Select pork belly with evenly distributed marbling, where the meat and fat are well balanced. This ensures a tender and flavorful final dish.
  2. Preparing the tofu: Use firm tofu for braised tofu as it holds its shape better. Before cooking, drain the tofu thoroughly and gently pat it dry to remove excess moisture.
