Grass carp | 500g |
Silken tofu | 400g |
Ginger | 4g |
Green onion | 8g |
Garlic | 6g |
Dried chilli | 2g |
Salt | 1g |
Essence of chicken | 2g |
Light soy sauce | 20g |
Dark soy sauce | 11g |
Pepper powder | 2g |
Steps:
1.Clean the grass carp, pat dry the surface, remove the fins and scales, then cut into pieces.
2.Place it in a bowl and marinate with black pepper, cooking wine, and salt. Mix well with hands and let it marinate for ten minutes.
3.Cut the tofu into cubes, slice the ginger and garlic, chop the green onions, and cut the dried chili peppers into segments.
4.Add cold water to a pot, bring it to a boil, add a little cooking oil and salt, then add the tofu and cook for 2 minutes.
5.Prepare a sauce: combine light soy sauce, dark soy sauce, oyster sauce, rice vinegar, black pepper, and some water. Mix well.
6.Heat oil in another pan, fry the fish pieces over medium heat until both sides turn golden brown. Remove and drain excess oil.
7.In a separate clay pot, heat oil, sauté the green onions, ginger, and garlic until fragrant, then layer the tofu on top.
8.Arrange the marinated fish on top of the tofu, then pour in the prepared sauce.
9.Pour in an appropriate amount of beer, bring to a boil over high heat, then reduce to low heat and simmer for 10 minutes.
10.Garnish with cilantro and scallions before serving. Enjoy!
