1.Clean the fresh shiitake mushrooms, remove the stems from the middle. (Choose shiitake mushrooms with thick, round, and plump caps). Clean and cut the Chinese yam, carrot, and potato into chunks.
2.Add cold water to a pot, put the chicken meat in it, wait for the water to boil, skim off the floating impurities, then boil for two minutes before removing the chicken and rinsing it with warm water.
3.Prepare all the ingredients, slice the shiitake mushrooms thinly, mince the ginger and garlic.
