Ingredients for Braised Chicken with Mushrooms

chicken half
Lentinus edodes 400g
Potato one
Carrot one
Yam 200g
Ginger 20g
Garlic 5g
Dried chilli 8g
Salt 4g
Light soy sauce 5g
Dark soy sauce 4g
Essence of chicken 4g
Sichuan Pepper 12g
Green onion 8g

Steps:
1.Clean the fresh shiitake mushrooms, remove the stems from the middle. (Choose shiitake mushrooms with thick, round, and plump caps). Clean and cut the Chinese yam, carrot, and potato into chunks.


2.Add cold water to a pot, put the chicken meat in it, wait for the water to boil, skim off the floating impurities, then boil for two minutes before removing the chicken and rinsing it with warm water.


3.Prepare all the ingredients, slice the shiitake mushrooms thinly, mince the ginger and garlic.


4.Pour an appropriate amount of oil into the pot, heat it until 80% hot. The chicken meat starts to sizzle in the pot, as if infused with life. Quickly stir-fry the chicken, letting it emit a mouthwatering aroma amidst the combination of oil and fire.


5.Continue stir-frying until the chicken turns slightly golden, as if wearing a golden coat. Add the minced ginger, garlic, chili, and Sichuan peppercorns to the pot. These unique seasonings immediately release a rich fragrance upon contact with the hot oil, resembling a delicious dance unfolding in the pot. Then add the sliced shiitake mushrooms and stir-fry until fragrant.


6.Add a spoonful of dark soy sauce, a spoonful of light soy sauce, and quickly stir-fry evenly with your skillful hands. Then add an appropriate amount of water. Cover the pot and let it simmer.

7.Put the chopped Chinese yam, carrot, and potato into the pot.


8.Continue cooking until the potatoes become tender. Add a small teaspoon of salt and chicken bouillon, and let it simmer until the sauce thickens.


9.Finally, plate the dish and enjoy it.


Tip
1.For those who prefer a stronger flavor, you can cut open dried chili peppers or add some bird’s eye chilies!
2.When blanching the chicken pieces, it is recommended to use cold water. This allows the impurities and blood foam in the chicken meat to be fully released, reducing any gamey taste and greasiness.
3.This braised and stir-fried chicken dish has a sauce, so there’s no need to thicken it. The sauce is delicious when poured over steamed rice.
