Bean sprouts mixed with spinach. This dish not only has a delicious taste but also rich in nutritional value. Ingredients for Bean Sprout and Spinach Salad

Spinach 100g
Bean Sprouts 90g
Red pepper 15g

Aginomoto 2g
Mature vinegar 5g

Steps:

1.First, let’s prepare the ingredients. Take a bunch of spinach, wash it thoroughly, and drain the excess water. Take a plate of bean sprouts, rinse them clean, and set them aside. Half a red bell pepper, deseeded and finely diced, will be used mainly for garnishing.

2.Next, we blanch the ingredients. Heat water in a pot, add a tablespoon of salt and a tablespoon of cooking oil. Salt and cooking oil help enhance the vibrant green color of the dish. Once the water boils, add the bean sprouts and spinach, and stir with a spoon to ensure even heating. Blanching helps remove oxalic acid from the spinach. After 40 seconds of blanching, pour out the water, rinse with cold water, and drain the excess water. Adding salt and cooking oil while blanching helps retain the bright green color. Spinach contains oxalic acid, so it needs to be boiled in hot water for several seconds before use.

3.Then, transfer the diced red bell pepper into a serving bowl. Add salt, monosodium glutamate (MSG), and then pour vinegar, ginger shreds, chili oil, and sesame oil. Stir with a spoon to dissolve the seasonings. Then add the blanched spinach and bean sprouts and mix well by tossing the bowl gently.
