Steps:
1.First, prepare 500 grams of chicken hearts. Use a knife to cut the chicken hearts open, but do not cut them all the way through. Remove any excess fat and blood vessels to better remove the blood from the chicken hearts. Once all the chicken hearts are prepared, rinse them in clean water.
2.Then, transfer the chicken hearts to a bowl and add 1 gram of salt, 1 gram of pepper, 3 grams of cooking wine, and a small handful of cornstarch. Mix well and marinate for ten minutes. Take a small piece of ginger, crush it, and then finely chop it into ginger paste. Crush a few cloves of garlic and finely chop them into garlic paste. Cut a green onion into small pieces. Cut a few pickled peppers into chili flakes. Add all these ingredients to the bowl and set aside. Cut one green bell pepper into diamond-shaped slices, half a red bell pepper into diamond-shaped slices, and two garlic sprouts into small sections. Add them to the bowl as well.
3.Once all the ingredients are prepared, we can start cooking. First, blanch the chicken hearts. Heat oil in a pan until it reaches 60% heat, then add the chicken hearts and blanch them for 20 seconds. Remove and drain the excess oil. This step is to make the chicken hearts more tender and chewy.
4.Leave a small amount of oil in the pan, then add the prepared ingredients and 5 grams of chili sauce. Stir-fry quickly until fragrant. Add the blanched chicken hearts and continue stirring. Pour a little water from the edge of the pan, add 5 grams of cooking wine, 5 grams of light soy sauce, 2 grams of dark soy sauce for color, 1 gram of pepper, and 1 gram of sugar. Continue stir-frying until the seasonings are well mixed. Add the prepared vegetables and stir-fry until they are cooked but still crunchy. Finally, drizzle a little chili oil for added color. The tender and delicious stir-fried chicken hearts are now ready to be served.
Tips
1.After cleaning the chicken hearts, remove any blood and gently scrape off the thin membrane on the surface of the hearts. This will make the hearts more tender and smooth.
2.When stir-frying the chicken hearts, use high heat and keep the cooking time short. This will help maintain the tender and smooth texture of the hearts. Avoid overcooking them for too long, as they can become tough and dry.
3.Choosing fresh chicken hearts is essential for making delicious stir-fried hearts. Fresh hearts have a tender and flavorful texture.
