Pork ribs 300g

Steps:

1.Firstly, prepare the ingredients. Cut 300g of pork ribs into even small pieces, thinly slice a piece of ginger, tie a few stalks of spring onion together, and set aside a small handful of preserved plums.

2.Once the ingredients are ready, blanch the pork ribs. Bring water to a boil in a pot, then add cold water and the pork ribs. Using cold water helps remove any blood or impurities from the ribs. Add 5g of cooking wine to remove any gamey smell. Skim off any foam that rises to the surface and blanch for one minute. Rinse the ribs with clean water and drain them.

3.Heat oil in a pan until it reaches about 50% hot. Gently add the drained pork ribs, shaking the pan to prevent sticking. Use a spoon to separate any ribs that stick together. Add the tied spring onion and sliced ginger. Stir-fry over medium heat for three minutes, moving the ribs with the spoon for even heating. Remove the ribs and drain excess oil.

4.Leave some oil in the pan and heat it up. Add 20g of tomato sauce. Stir quickly until evenly blended, then pour in some water along the edge of the pan. Season with 2g of salt, 10g of white vinegar, a small handful of rock sugar, and the preserved plums. Increase the heat to high and bring it to a boil. Add the ribs back to the pan and simmer on low heat for 20 minutes.

5.After 20 minutes, remove the tied spring onion and ginger slices. Increase the heat to high and continue simmering for five minutes to reduce the sauce. The sauce should thicken, and the ribs will become reddish and flavorful. Increase the heat to high, stir-fry further to reduce the sauce to a sticky consistency. Drizzle in a little sesame oil to enhance the color, mix well, and transfer to a serving plate. Garnish with chopped cilantro before serving.
