A recipe for making red bean cakes

Red bean cakes not only taste delicious but also have rich nutritional value. Ingredients for red bean cakes

Flour 200g
Sugar 3g
Yeast 3g
Red bean paste 200g
Black sesame seed 20g
Edible oil 20g

Steps:

1.Prepare 200g of all-purpose flour, add 3g of granulated sugar, and 3g of yeast. Pour in lukewarm water, around 35 degrees Celsius, and stir the flour until it forms crumbs. Add 5g of vegetable oil and knead it into the dough until well incorporated. Knead the dough just enough to form a smooth ball. Cover the dough with a lid and let it ferment in a warm place for two hours.

2.After two hours, when the dough has fermented, take it out and place it on a cutting board. Press down and shape the dough into a thicker strip. Cut the strip into evenly sized small pieces, then roll each piece with a rolling pin into a round shape, thicker in the middle and thinner at the edges.

3.Once all the dough rounds are rolled out, place red bean paste in the center of each round. Use a folding technique to seal the edges of the dough and enclose the red bean paste. After sealing all the dough rounds, place them on the cutting board. Lightly wet the surface of each red bean cake with water and sprinkle some black sesame seeds. Cover with plastic wrap and let them ferment for another 20 minutes to become more fluffy and soft.

4.After 20 minutes, heat an electric griddle. Brush a layer of vegetable oil onto the griddle. Place the red bean cakes on the griddle and fry one side until golden brown. Flip them over and cover the griddle with a lid, letting them steam for about a minute. Uncover the lid and flip the cakes a few more times.

5.To ensure even heating throughout, stand the cakes upright in areas that are not fully cooked. Fry them a bit longer to ensure they are all thoroughly cooked. Remove them from the griddle and transfer them to a plate.

Tips

1.Select red beans that are bright in color, intact in shape, and free from infestation. It is preferable to soak them for several hours beforehand to facilitate easier cooking until they become tender.
2.Adjust the sweetness of the red bean paste according to personal taste by adding an appropriate amount of sugar or other sweeteners that suit your preference.
3.Pour the red beans into a pot, add sufficient water, bring it to a boil over high heat, and then reduce to low heat to simmer until fully cooked. You may add a small amount of alkaline water or baking soda to soften the red beans as desired.
