2.Next, blanch the mushrooms. Boil water in a pot and add 2 grams of salt and a drizzle of cooking oil. The salt adds flavor to the mushrooms, while the oil helps to keep their color bright. Once the water is boiling, add the mushroom strips and blanch them until they become slightly soft. This usually takes about 40 seconds. Rinse them quickly with cold water and place them in a bowl.
3.Take a clean, absorbent towel to remove excess moisture from the mushrooms. Crack an egg into the bowl with the mushrooms, sprinkle in 1 gram of salt, 1 gram of chicken powder, and 1 gram of black pepper.
