Steps:
1.I selected a fresh piece of beef brisket and placed it on a cutting board. Carefully, I used a knife to cut it into small cubes measuring 3 centimeters each side. Next, I picked several fresh tomatoes, placed them on the cutting board as well, and finely diced them into pieces similar in size to the beef cubes.
2.I placed the diced beef brisket into a pot, added enough cold water, ginger slices, and cooking wine. I brought it to a boil over high heat and skimmed off any impurities that rose to the surface. Then, I reduced the heat and continued simmering for about 10 minutes. Finally, I removed the beef brisket from the pot and set it aside.
3.I added an appropriate amount of oil to the pot and heated it up. Once hot, I added rock sugar and stir-fried it over low heat until it melted and turned caramelized. Then, I added the beef brisket cubes and stir-fried them until they were evenly browned on the surface. I added ginger slices, star anise, bay leaves, dried chili peppers, and dried hawthorn to the pot and stir-fried them evenly. Next, I added two tablespoons of soy sauce, one tablespoon of dark soy sauce, and one tablespoon of oyster sauce. I continued stir-frying to allow the beef brisket to fully absorb the flavors of the seasonings. After adding half of the diced tomatoes and stir-frying them evenly, I added enough water to submerge the beef brisket. I covered the pot with a lid, reduced the heat to low, and let it simmer for 1 hour to allow the beef brisket to fully absorb the broth’s flavors.
4.When the time was up, I added half a teaspoon of salt and the remaining diced tomatoes. I stir-fried them over high heat for 5 minutes to ensure the tomatoes and beef brisket were well blended. Finally, I garnished the dish with a suitable amount of chopped green onions and it was ready to be enjoyed. The delicious tomato stewed beef brisket is now complete.
Tips
1.Select beef brisket with a suitable amount of fat and connective tissue. This will make the braised beef more tender and juicy.
2.Prior to simmering, blanch the beef brisket in boiling water to remove blood and impurities. This step not only enhances the quality of the dish but also gets rid of any unpleasant odors.
