The tender tofu, as white as snow and as silky as silk, carries the unique flavor of salted egg yolk. When the steaming hot sauce blends into the mouth, the smooth and tender tofu dances on the taste buds, mingling with the sandy texture of salted egg yolk. It is a harmonious blend of warmth and richness, a delicate and mellow combination.

Ingredients for Salted Egg Yolk Braised Tofu:

Silken tofu 500g
Salted Egg Yolk 4个
Small chili pepper 5g
Chopped green onion 5g
Salt 3g
Starch 5g

Instructions:

1.Prepare the required ingredients. Wash the small chili peppers and chop them finely. Crush the salted egg yolks and set them aside in a bowl for later use.

2.Carefully dice the tofu into small, uniformly sized cubes. When cutting, take it one piece at a time to prevent the tofu from crumbling.

3.Clean the pan thoroughly and heat it up. Add a small amount of oil and directly put in the crushed salted egg yolks. Stir-fry the salted egg yolks for a short time until fragrant, and you will notice bubbles forming.

4.Add the chopped small chili peppers to the pan with the crushed salted egg yolks. Add purified water and bring it to a boil over high heat. Cook for approximately 1-3 minutes.

5.Add the diced tofu directly to the pan, and season with salt. Use medium-low heat to slowly simmer and stew the dish. While cooking, gently stir and push the tofu using a spoon, allowing the aroma of the salted egg yolks to infuse into the tofu. Simmer until a golden-colored broth is formed, fully stimulating your appetite.

6.Add the starch into the water and stir well, then set it aside. After the sauce is completely reduced, pour it into the starch mixture to thicken it, making the dish more concentrated and brighter.

7.Sprinkle with chopped spring onions, then transfer the dish directly to a serving plate. A delicious home-cooked dish is now ready to be enjoyed.

Tips:

1.It is essential to use tender tofu for this dish. Tender tofu has a delicate and soft texture, with a fresh and tender mouthfeel. It has a high water content, making it easier for the salted egg yolk and seasonings to penetrate, resulting in a more delicious and flavorful dish.

2.When adding the tofu, gently push it instead of stir-frying to prevent it from breaking apart.

The taste of salted egg yolk is like golden sand dunes under the sunlight, carrying a sense of earthy richness and depth. Its encounter with tofu is like a poem of nature, a collision of textures and a fusion of flavors. The flavor of the salted egg yolk diffuses within the dense tofu, while the tofu becomes even more delicious in the salty and fragrant essence of the salted egg yolk.
