Introduction: Pork front meat clip refers to the thigh meat on top of the front leg of a pig. It is located behind the neck and in front of the third rib. Due to the movement and exercise of this part in pigs, it tends to have a higher fat content, resulting in a tender texture with some chewiness. Normally, fresh pork should have good elasticity, where any indentation made by pressing with fingers quickly bounces back. In contrast, pork from sick or not fresh sources may lack elasticity.
