Introduction: Pork trotter tendon refers to the tendons that connect the joints within the pig’s trotter. After being manually extracted, they are dried for preservation. Trotter tendons are composed of collagen protein and elastin protein. Collagen protein can be digested but its nutritional value is not as high as that of muscle tissue protein. However, due to its rich collagen content and soft texture, it is commonly used as an ingredient in festive banquet dishes. Good quality pork trotter tendons have a bright white color with a glossy appearance, no residue or rotten meat, transparent meat texture, compact and elastic structure. If the pork trotter tendons have a yellow color, soft texture, and low elasticity, it indicates that they have been stored for too long and should not be chosen.
