It is also rich in trace elements such as phosphorus, potassium, and sodium. Fresh pig hearts have a red or pale red myocardium and a milky white or slightly reddish fat; spoiled pig hearts have a reddish-brown myocardium and slightly greenish fat. It’s best not to purchase pig hearts that appear very dull in color, similar to the color of coagulated blood. Nodes, lumps, abnormal colors, and spots on the upper part of the pig heart are signs of it being unsuitable for consumption.
