Ingredients for white cut chicken

Sanhuang chicken half
Ginger 8g
Garlic 10g
Soy sauce 6g
Sesame oil 5g
Oyster sauce 6g
Salt 3g
Essence of chicken 2g
Pepper powder 3g
Scallion 13g

Steps:
1.Clean and prepare half of a free-range chicken.

2.Take a piece of ginger, crush it into paste, squeeze out the excess water, and put it in a bowl. Then, chop some spring onions and add them to the bowl.

3.Add a little sesame oil, salt, chicken powder, and a pinch of pepper to the bowl, and mix well. Then, pour in hot cooking oil to release the fragrant aroma.

4.Bring water to a boil in a pot, add the chicken, followed by the spring onions, ginger, cooking wine, and a little salt. Blanch the chicken for about 5 seconds. Repeat this process three times.

5.Remove the chicken from the pot and soak it briefly in cold water. This will help the skin stay firm and crispy.

6.Once cooled, place the chicken back into the pot. Add water, bring to a boil, and then simmer for 25 minutes.

7.After cooking, transfer the chicken to cold water to cool down. This will ensure the skin remains crisp and enhance the texture.

1.When boiling the chicken, use medium heat instead of high heat to avoid overcooking the meat.
