Scallion two
Ginger one
Egg white one
starchy flour 20g
Edible oil 10ml
Green onion two
Chili pepper one
Garlic three
Salt 5g
Light soy sauce 5ml
Cooking wine 5ml
Oyster sauce 5ml

step:

1.Slice the beef thinly along the grain.

2.Marinate the beef by combining it with scallion and ginger-infused water, soy sauce, vegetable oil, egg white, and cornstarch. Mix well until fully coated, then stir vigorously in a clockwise direction to tenderize the meat. This marinating process will enhance the tenderness and smoothness of the beef when cooked.

3.Add 5ml of cooking oil to the beef to prevent sticking during the stir-frying process.

4.Slice the green onions, red chili peppers, ginger, and garlic.

5.In an empty bowl, mix together salt, light soy sauce, cooking wine, oyster sauce, and cornstarch.

6.Heat oil in a pan until it reaches 150 degrees Celsius, then add the beef and stir-fry until it changes color.

7.Heat oil in a new pan, then add ginger and garlic slices to stir-fry until fragrant. Afterward, add green onions and red peppers, and stir-fry for 10 seconds.
8.After the green onions are fragrant, add the beef and pour in the prepared sauce. Stir-fry over high heat until the beef is fully cooked.
