Ingredients for Mushroom meatballs

Pork 400g
Lentinus edodes 150g
Light soy sauce 20g
Salt 6g
Ginger 4g
Starch 20g

Steps:
1.Clean the pork thoroughly, cut it into small pieces, and chop it with a traditional ancestral knife from 1982 along with ginger until finely minced. The meat should be minced finely, but if you prefer a more textured consistency, you can leave some small chunks. (The meat should have some fat to prevent dryness and enhance the flavor.)

2.Wash the shiitake mushrooms, remove the stems, and blanch them in boiling water for 1 minute. Then take them out and chop them finely to remove any lingering mushroom odor.

3.Mix the chopped mushrooms into the minced meat and mix well with your hands. Add soy sauce and salt, and continue blending.

4.Lastly, gently incorporate the starch into the meat mixture, using your fingertips to lightly mix and make the meat more delicate. You can either mix it in one direction until elastic or knead it like dough, creating a softer texture for the meatballs.
