Eating spicy shrimp is a wonderful experience. This dish has an enticing appearance, with the bright red shrimp contrasting against the green minced scallions, ginger, and garlic, along with red chili peppers and brown Sichuan peppercorns, arousing one’s appetite. With the first bite, the combination of the numbing spiciness and tender shrimp creates a perfect harmony, as if being immersed in a culinary ocean. Ingredients for Spicy shrimp

Freshwater shrimp one catty
Garlic 8g
Dried chilli nine
Ginger 7g
Sichuan Pepper 8g
Thread Pepper two
Coriander 2g
Salt 3g
Sugar 3g
Light soy sauce 4g
Pepper powder 5g
Cooking wine 4g
Chili powder 3g

Steps:
1.Clean the green shrimp thoroughly and use a toothpick to remove the shrimp vein from the second segment.


2.After removing the shrimp vein, use scissors to trim off the sharp point of the shrimp head and the antennae, so you won’t get pricked while eating.


3.Rinse the green shrimp, drain excess water, then place them in a large bowl. Add a pinch of salt, cooking wine, ground pepper, light soy sauce, some chili rings, and ginger strips. Marinate for 20 minutes.


4.Cut the ginger into fine shreds, the dried chili into small pieces, mince the garlic and line pepper, and prepare a small handful of Sichuan peppercorns.


5.Heat the pan, add cooking oil once hot, then reduce to medium heat. Add all the seasoning ingredients, stir-fry until fragrant. If you prefer more spice, add extra dried chili peppers.


6.After stir-frying the seasoning ingredients for a minute and releasing their aroma, add the marinated green shrimp. Note that there might be some marinade liquid with the shrimp; before adding to the pan, use a slotted spoon to drain the shrimp slightly. This will prevent the shrimp from becoming too soft during stir-frying.


7.Increase the heat to high and use the frying method, ensuring each shrimp is spread out flat in the pan to sear the shells. Flip to fry the other side once the first side is well-seared.


8.When the shrimp shells are crispy and fragrant, add a little light soy sauce, a teaspoon of sugar, and ground pepper. Continue stirring for another minute, then add a touch of chili powder..Look for a crispy and fragrant outer shell on the green shrimp, with a slight coating of chili powder on each shrimp. This will give it a dry pot shrimp texture when eaten.


9.Turn off the heat, transfer to a serving plate, and sprinkle some cilantro on top for an appetizing appearance.

1.The choice of ingredients for the hot pot can vary according to personal preferences, but it is important to ensure that all ingredients are in a mature and edible state when stir-frying.
2.It is crucial to stir-fry the base sauce over medium-low heat; excessive oil temperature can lead to the base sauce sticking to the pot and ruining the dish.
3.It is recommended to use live shrimp for this recipe. Firstly, they are fresh and safe to eat, and secondly, their texture is more firm and slightly sweeter compared to frozen shrimp. When using a knife to split the shrimp’s back, be cautious as the shells are hard and slippery. Pay attention to the claws or consider using clean scissors to cut open the back, which is also a good method.
4.When deep-frying the shrimp, it must be done quickly and with hot oil. Once the shrimp’s outer layer appears slightly translucent, promptly remove them from the oil. This frying time is quite short, around one and a half minutes. This step is crucial for making dry pot shrimp since overcooking the shrimp will result in tough meat that is not pleasant to eat.
