The beloved dish “Muxu pork” is highly cherished for its tender slices of pork and crispy, flavorful vegetables. Ingredients for Muxu pork

Pork Lean 200g
Auricularia auricula ten
Egg two
Cucumber 1个
Carrot half
Green onion 10g
Ginger 15g
Starch 8g
Salt 5g
Essence of chicken 5g
Soy sauce 5g
Cooking wine 7g

Steps:
1.Prepare the necessary ingredients and clean them thoroughly. Soak the wood ear mushrooms in advance.


2.Slice the lean pork into thin pieces with a sharp knife. Rinse it multiple times in water to remove any blood, until there is no visible blood. Add a pinch of salt, cooking wine, and cornstarch to the pork. Mix well with your hands and cover it, marinating for 30 minutes.


3.Chop the scallions into small pieces and mince the ginger. Cut the carrots and cucumbers into thin diamond-shaped slices.


4.Bring a pot of water to boil. Add the soaked wood ear mushrooms and carrot slices to blanch them. Once the water boils, remove the mushrooms and carrots using a slotted spoon and set aside.


5.Heat some oil in a wok or pan. Pour in the beaten eggs and stir-fry until they turn golden brown. Transfer the eggs to a plate.


6.Leave some oil in the pan and add the marinated pork slices. Stir-fry until they turn golden brown and then transfer them to a plate.


7.Using the remaining oil in the pan, sauté the scallions and ginger until fragrant. Add the soaked wood ear mushrooms, sliced carrots, and cucumbers, and stir-fry for a minute or two.


8.Immediately add the cooked pork slices and scrambled eggs to the pan and stir-fry on high heat until the cucumbers are slightly tender. Season with salt, chicken powder, and a little soy sauce. Stir everything together and remove from heat.


9.The pork slices are tender and flavorful, while the vegetables are crisp and refreshing. It’s time to enjoy this delicious dish!

1.The ingredients used in this recipe are relatively quick-cooking, making it suitable for high heat stir-frying. This method helps retain the nutritional content of the vegetables.
2.Do not blanch the ingredients for too long to ensure their crispness and tenderness. When seasoning, you can move the wok away from the heat or reduce the flame.
