Oyster sauce 15g
Salt 1g
Scallion 25g
Sesame oil 5g
Dumpling wrapper 300g
Chili Oil 15g

Tricholoma Matsutake powder 2g
Chili powder 5g
Black pepper powder 1g

Steps:
1.First, peel and cut the washed potatoes into small pieces and steam them in a steamer. When the potatoes become soft and can be easily pierced with a chopstick, turn off the heat. Transfer the cooked potato chunks to a large mixing bowl and use a spoon to mash them into a smooth paste.

2.Add an appropriate amount of chili powder to the mashed potatoes and mix well. Then, pour hot oil over the mashed potatoes, causing a sizzling sound as the chili powder and mashed potatoes mixture releases its tempting aroma. Next, cut the ham sausage into small cubes and evenly sprinkle them over the mashed potatoes. light soy sauce, oyster sauce, black pepper powder, and porcini mushroom powder, then stir well. These seasonings add delicious flavor and unique fragrance to the mashed potatoes. Then, crack an egg into the mixture and gently stir with a spoon. The addition of the egg makes the mashed potatoes smoother and enhances the texture. Finally, add chopped scallion , salt, sesame oil, and chili oil, and mix everything together once again. These ingredients bring out even more distinct flavors and aromas in the mashed potatoes.
3.Once the filling is ready, take out the purchased dumpling wrappers and start wrapping the dumplings. Hold a wrapper in the palm of your hand, place an appropriate amount of filling in the center, fold the wrapper in half to seal it into a semi-circular shape. Then, slightly extend your index finger over your thumb, use your index finger to push the dumpling skin forward and create pleats, while lightly pinching the front end of the dumpling skin with your thumb. Repeat this pleating motion until you reach the top right corner and release your grip. This way, the dumpling is complete.
4.Fill the pot with water, using a generous amount depending on the quantity of dumplings. Add a pinch of salt to prevent sticking, then bring the water to a boil. Once the water is boiling, add two to three dumplings first and gently stir them with a spoon to create a whirlpool in the pot. Then, add the remaining dumplings, continuously using the back of the spoon to lightly push the dumplings to prevent them from sticking to the bottom of the pot. Once all the dumplings are added, cover the pot with a lid. Wait for the water to come to a boil again, and as the dumplings float to the surface, open the lid and use the back of the spoon to separate and disperse the dumplings. You can also add a small amount of cold water and wait for it to come to a boil again.
5.When the water in the pot is boiling vigorously, the steaming hot dumplings are fully cooked and ready to be enjoyed. They are carefully arranged on a beautiful plate and served at the table. Each dumpling is plump and enticing, with a slightly translucent wrapper that reveals the hidden filling, making one’s mouth water in anticipation.

1.After cutting the potato slices, it is best to rinse them with clean water to remove surface starch, making them less likely to stick together during steaming. The steaming time for potato slices should be controlled properly. Generally, steaming for 10-15 minutes on high heat is sufficient; over-steaming can make the potato slices too soft and mushy. When steaming the potato slices, it is recommended to lay them flat in the steamer to ensure even heating.
