Braised pork intestines are made using carefully selected pork intestines as the main ingredient and cooked through a braising process. Steps:

1.First, slice the ginger and cut the green onions into small sections. Heat two tablespoons of edible oil in a pan and add the sliced ginger and green onion . Stir-fry until they slightly change color and release their aroma. Next, prepare garlics, Angelica dahurica,cymbopogon citratus , cinnamon bark, star anise,fructus amomi, dried chili ,tangerine peel, cardamom, and deseeded amomum tsao-ko . add these ingredients one by one to the pan and stir-fry slowly until a rich aroma is released. Each spice will gradually release its unique fragrance, intertwining to create an enticing combination of aromas. Once the spices are fragrant, set them aside for later use.

2.Prepare a bowl and put fennel seeds, Sichuan peppercorns, and green pricklyashes into the bowl. These spices emit unique aromas, adding rich flavors to the seasoning mixture. Then, quickly pour the pre-fried spicy seasoning into the prepared bowl and gently press down on the spices with a spoon to trap their aroma inside the bowl, retaining as much flavor as possible. In this way, the secret seasoning for the braised fatty sausages perfectly blends the flavors of various spices, achieving the best texture and taste.

3.Take out the purchased 5 kilograms of pork intestines and carefully cut them open along the edges using a vegetable knife. After cutting, place them in a sink and rinse the insides with clean water to wash away any residue or impurities. Prepare a bowl and add an appropriate amount of water and table salt to it. Soak the cleaned fatty sausages in the bowl. After soaking in the saltwater for about 10-15 minutes, remove the pork intestines and gently rub them under running water. Use your fingers to rub the inner and outer surfaces of the pork intestines , thoroughly cleaning every inch. Once rubbed, place the pork intestines in clean water and rinse them again under running water. Make sure the water reaches every corner, washing away all the saltwater and residue. On the cleaned surface of the pork intestines, there may still be a layer of external membrane. Carefully remove it using a vegetable knife to allow better absorption of seasonings and improve the texture. Finally, rinse the pork intestines once more with running water to ensure they are completely clean and free of any residue.

4.Add a spoonful of peanut oil to the pot, then add an appropriate amount of bean paste. Stir-fry the bean paste.  for a while until it releases a fragrant and pungent aroma. Next, add cleaned pork intestines  to the pot, followed by a splash of Shaoxing wine, and stir-fry to evenly absorb the aroma of the wine. Then, add the secret ingredients for making braised pig intestines to the pot and continue stir-frying for a while to allow all the ingredients to fully blend and the pork intestines to absorb the flavor of the secret ingredients. To adjust the color and texture, you can add an appropriate amount of light soy sauce, dark soy sauce, and soy sauce, stirring well to achieve an enticing deep red color. Additionally, sprinkle in some white sugar to increase sweetness and enhance the overall taste. At the same time, add an appropriate amount of cooking oil, which will not only add fragrance to the dish but also make it more flavorful. Then, pour in a suitable amount of hot water and cook until it slowly boils. This way, the pork intestines will fully absorb the flavors of the broth and become even more tender and delicious.

5.Pour the cooked pork intestines and all the braising liquid into the rice cooker. Select a suitable cooking mode, such as “keep warm,” “cook porridge,” or “cook rice,” and adjust the time to 45 minutes. Allow the pork intestines to slowly simmer in the rice cooker for 45 minutes. During this process, the pork intestines will absorb the flavors of the braising liquid, enhancing its taste and further improving its tenderness. The slow simmering process helps the pork  intestines to fully blend with the braising liquid, allowing the seasoning to penetrate into the meat, making the pork intestines even more delicious.

6.After 45 minutes, the pork intestines have been cooked and simmered for a long time, resulting in a tender,after cooking, the pork intestines become more tender, juicy, and have a soft and elastic texture. Now, prepare an elegant bowl and transfer the braised pork intestines into it. Then, bring the bowl filled with aromatic and flavorful pork intestines to the table, ready to be enjoyed.
