Step:

1.Start by preparing a whole chicken. Chop off the feet and remove the rear end of the chicken. Then, split the chicken down the middle, making sure not to completely separate it, maintaining its overall structure. This will help the roasted chicken maintain its shape. Next, place the split chicken in clean water and thoroughly wash out any blood or impurities from the interior. Gently stir the inside of the chicken with your hands or chopsticks to ensure thorough cleaning and remove any residues. Then, remove the cleaned chicken from the water and pat it dry. It’s important not to chop the chicken into halves directly, as it may affect its overall shape and texture. Through these steps, we have successfully prepared the whole chicken and ensured its cleanliness and integrity.

2.Next, we will marinate the chicken. Prepare a piece of ginger, slice it thinly, and place it in a bowl. Crush a few stalks of scallions and add them to the bowl along with 5 grams of Sichuan peppers, 10 grams of cooking wine to remove any unwanted odors, 5 grams of oyster sauce, 3 grams of salt, a little sugar, a tablespoon of pepper powder, and 10 grams of chili paste. Evenly coat the chicken’s surface, as well as the interior, with the marinade. After applying the marinade, let the chicken marinate for 30 minutes, allowing the flavors to penetrate the meat.

5.Once the ingredients are ready, we can start frying the chicken. Add an appropriate amount of cooking oil to a pot and heat it up to around 60% hot. When the oil starts to smoke slightly, carefully place the chicken, coated with the flour mixture, into the pot. Gently shake the pot to prevent the chicken from sticking to the bottom surface. After the chicken takes shape, reduce the heat to low and fry for about 8 minutes. Continuously pour hot oil over the exposed surface of the chicken to ensure even cooking inside and out, while also preventing the bottom from burning. Once one side is fried, flip it over to fry the other side, and continue pouring hot oil over the exposed surface.

6.After approximately 8 minutes of frying, the chicken should be fully cooked and have a golden brown color on the surface. At this point, you can remove the fried chicken and place it on kitchen paper to drain excess oil. Next, prepare a plate and arrange a circle of cilantro as a garnish around the edge of the plate.
