Ingredients for Stir-fried Pleurotus eryngii with Garlic Sprouts:

Pleurotus eryngii 300g
Garlic sprout 100g
Garlic 8g
Ginger 5g
Light soy sauce 3g
Chicken powder 2g
Salt 2g
Dried chilli 5g
Bean paste 3g
Pepper powder 1g

Step:

1.First, let’s start preparing the ingredients. Take two Pleurotus eryngii mushrooms and thoroughly wash them. Then, cut the mushrooms into halves and slice each half into thick pieces. Next, take a small bunch of garlic sprouts and cut them diagonally into segments. Also, prepare two cloves of garlic and slice them into thin pieces. Similarly, slice a small piece of ginger into thin slices. Additionally, add a small handful of dried chili peppers and a spoonful of bean paste, keeping them aside for later use.

2.Once all the ingredients are prepared, we can proceed to the next step. Pour an appropriate amount of cooking oil into a pan and heat it up until it reaches a moderate temperature. Once the oil is heated, quickly add the sliced Pleurotus eryngii mushrooms to the pan and fry them briefly. Maintain medium heat and fry for about 30 seconds. Stir-fry the mushrooms rapidly to lightly brown and crisp the surface. After frying, transfer the mushrooms out of the pan and use chopsticks or a strainer to drain off excess oil. This ensures that the mushrooms are not overly oily while maintaining their tender texture.

3.Keep a little oil in the pan and add the chopped scallions, ginger, and other seasonings prepared earlier. Stir-fry to release the red oil from the bean paste. Then, add the fried Pleurotus eryngii mushrooms and quickly stir-fry a few times. Add a spoonful of light soy sauce and mix it evenly with the mushrooms. Now, it’s time to season the dish. Add 2 grams of chicken powder, 1 gram of pepper powder, and 2 grams of salt. Quickly mix the seasonings until well combined. Add the julienned red bell peppers and garlic sprouts. Stir-fry the garlic sprouts for a short time, just a few flips.

4.After completing the frying of Pleurotus eryngii mushrooms, we can proceed to stir-frying the garlic sprouts. Heat up the oil in the pan to an appropriate temperature and add the pre-prepared garlic sprouts. Stir-fry the garlic sprouts quickly over medium heat until they are about 70% cooked. This will ensure that the garlic sprouts maintain a crisp texture while showcasing their unique aroma. Once the garlic sprouts reach the desired level of doneness, turn off the heat and quickly transfer the dish onto a plate. The delicious home-cooked Stir-fried Pleurotus eryngii with Garlic Sprouts is now ready!

Tips:

1.Choose fresh Pleurotus eryngii mushrooms and garlic sprouts to ensure their good texture. The Pleurotus eryngii mushrooms can be thinly sliced or torn into small pieces, while the garlic sprouts should be cut into segments for later use.

2.Pleurotus eryngii mushrooms often have a layer of mucus on their surface, which can be gently wiped off with a wet paper towel or rinsed with water. When tearing the Pleurotus eryngii mushrooms apart, remove the tough stem part and keep only the tender portion.

3.Once the Pleurotus eryngii mushrooms and garlic sprouts are stir-fried to the desired state, they should be immediately taken off the heat and plated to maintain their texture and color. Overcooking can result in the Pleurotus eryngii mushrooms becoming tough and the garlic sprouts losing their crispness.

Stir-fried Pleurotus eryngii with Garlic Sprouts is a nutritious and uniquely textured delicacy. The combination of Pleurotus eryngii mushrooms and garlic sprouts creates an enticing aroma. Through the process of stir-frying in hot oil, the Pleurotus eryngii mushrooms develop a golden exterior, with a tender and smooth texture. Meanwhile, the garlic sprouts turn vibrant green and release a fragrant garlic aroma. This dish is not only delicious but also rich in protein, fiber, vitamins, and other nutrients beneficial for health. Whether paired with rice or noodles, this dish will delight your taste buds and bring satisfaction and joy through the enjoyment of good food.
