Soybean sprouts 200g
Salt 2g
Starch 10g
Egg 50g
Scallion 5g
Garlic 5g
Sichuan Pepper 3g
Chicken powder 1g
Sugar 2g
Chili Oil 3g
Pepper powder 1g
Thirteen-spices 2g
Dried chilli 5g
White sesame seed 5g

Step:

1.First, we prepare 200 grams of soybean sprouts. Place the soybean sprouts in a wide bowl and pour enough clean water to completely cover them. Gently stir the soybean sprouts with your hands to ensure they are fully immersed in the water. This helps remove any impurities or sand from the surface. Then lift the soybean sprouts out and place them in a colander or basket to drain off excess water. Next, to thoroughly dry the soybean sprouts, you can use kitchen paper towels or a clean cloth to gently pat them dry. Make sure to remove as much excess moisture as possible, as this will allow for better cooking of the soybean sprouts. Now, the cleaned and drained soybean sprouts are ready for the next steps of cooking. 2.Next, season the soybean sprouts. In the bowl, add 2 grams of salt, 1 gram of pepper powder, and 2 grams of thirteen thirteen-spices. Mix well. Add a handful of starch and mix evenly, ensuring that each strand of the sprouts is coated with starch. Cut a few stalks of scallions into small pieces and finely chop a few cloves of garlic.

3.With the ingredients ready, let’s start frying the soybean sprouts. Add an appropriate amount of cooking oil to the pan. When the oil reaches about 50% heat, add the soybean sprouts one by one into the pan. Fry them over medium-low heat for 2 minutes, continuously shaking the pan and gently pressing the sprouts with a spoon to ensure even heating. After 2 minutes, the sprouts should be fully fried with a golden surface. Pour out the fried soybean sprouts, allowing the excess oil to drain off.

4.Keep a small amount of oil in the pan and heat it up. Add 3 grams of Sichuan pepper and a small handful of dried chili peppers. Stir-fry over low heat to bring out the fragrant and spicy flavors. Then add the chopped scallions and stir-fry until fragrant. Next, add the fried soybean sprouts and quickly stir-fry to coat them evenly. Remove from heat and season with 1 gram of chicken powder, a small amount of sugar, a handful of white sesame seeds, and drizzle some chili oil for added color to the dish.

5.In the final step of cooking soybean sprouts, you can use the technique of quickly flipping the pan. Heat the pan to a moderate temperature and add an appropriate amount of cooking oil. Once the oil is hot, quickly pour in the soybean sprouts. Stir-fry the sprouts rapidly, ensuring each one is evenly heated and quickly infused with flavors. Stir-fry for approximately 2-3 minutes until the soybean sprouts become slightly crispy, retaining some chewiness. At this point, the soybean sprouts will be well-seasoned and fully cooked.
