Dried chilli 5g
Pepper powder 1g

Step:

1.First, let’s prepare the ingredients. Take 200g of pork and slice it into thin and even pieces. Place the sliced pork in a plate and set it aside. Cut 3 stalks of garlic chives into small sections and set them aside. Slice a small piece of ginger into thin slices and do the same with 4 cloves of garlic. Combine the ginger and garlic slices together. Prepare a small bowl and add a handful of Sichuan peppercorns and a bunch of dried chili peppers for later use.

2.Once the ingredients are ready, we will blanch the pork head meat. Fill a pot with water and bring it to a boil. Place the sliced pork head meat into the pot, along with 5g of cooking wine to remove any fishy smell. Boil the pork head meat over high heat to remove impurities. Once the water boils, remove the pork head meat and rinse it with clean water to ensure it is clean. Drain the water and set the pork head meat aside.

3.Next, we will quickly fry the pork head meat. Heat some oil in a pan until it reaches around 60% hot, and there is a slight smoke coming from the oil surface. Add the drained pork head meat to the hot oil and quickly stir-fry it for about 10 seconds. Remove the pork head meat from the pan and drain any excess oil. This step aims to remove any excessive oil from the pork head meat.

4.Keep a small amount of oil in the pan, not too much. Once the oil is hot, add the Sichuan peppercorns and dried chili peppers to infuse the dish with their fragrant and spicy flavors. Be cautious with the oil temperature to avoid burning the chili peppers. Add the ginger and garlic slices, stir-frying until fragrant. Then add the drained pork head meat to the pan, quickly stir-frying and coating it evenly. Pour 5g of cooking wine around the edges of the pan; the heat will evaporate the alcohol, effectively removing any remaining fishy smell. After thoroughly mixing, remove from heat and season with 1g of salt, 1g of Aginomoto, a small amount of sugar for freshness, 1g of pepper powder, 2g of dark soy sauce for color enhancement, and 5g of chili oil to give the dish a glossy appearance. Stir-fry over high heat to release the aroma of the seasonings.

5.In the final step, to enhance the texture and add a unique aroma, we can garnish the dish with the chopped garlic chives. Garlic chives have a refreshing flavor, and adding an appropriate amount of them can bring a distinct taste to the Spicy Pork Head Meat. Heat the pan and add a sufficient amount of oil. Once the oil is hot, add the chopped garlic chives and stir-fry. Control the heat so that the garlic chives become slightly softened but still maintain some crunchiness, stir-frying for about 3 minutes. Stir-fry quickly to ensure even distribution of the garlic chives on the pork head meat. Once the garlic chives are thoroughly mixed with the pork head meat, transfer it to a serving plate.
