Chicken feet 200g
Green onion 10g
Ginger 8g
Star anise 2g
Sichuan Pepper 2g
Fragrant leaves 2g
Cinnamon bark 2g
Rock sugar 10g
Cooking wine 10g
Salt 2g
Aginomoto 1g
Oyster sauce 5g
Dried chilli 8g
Chili powder 5g
Chili paste 5g

Step:

1.First, let’s prepare the chicken feet. Take 200 grams of cleaned chicken feet and use a knife to remove the toes one by one. Then, chop the chicken feet into sections and set them aside in a bowl. Cut one stalk of white scallion into small pieces, thinly slice a piece of ginger, and add them to the same bowl. Add one star anise, two grams of Sichuan peppercorns, a small handful of dried chili peppers, two fragrant leaves, and a small piece of cinnamon bark to the bowl. Lastly, prepare 10 grams of rock sugar and set it aside in the bowl.

2.With the ingredients ready, blanch the chicken feet. Boil water in a pot and pour cold water over the chicken feet. Add 5 grams of cooking wine to remove any unwanted smell. Bring the water to a boil, skim off any foam that rises to the top, and remove the chicken feet. Rinse them with clean water and drain for later use.

Finally, add 5 grams of chili powder to enhance the spiciness.
