Steps:

1.First, let’s prepare the ingredients. Soak the dried beancurd bamboo in cold water for two hours. Do not use hot water, it’s best to use cold water for a good texture. Soak the dried wood ear fungus in warm water for two hours in advance. Peel and slice a carrot into thin slices, then cut them into fine shreds. Remove the seeds from half a green pepper and cut it into fine shreds. Cut the soaked beancurd bamboo into sections and place them in a bowl. Cut off the roots of the soaked wood ear fungus, make a cut in the larger ones, and place them together with the other ingredients. Crush a few cloves of garlic and chop them into minced garlic. Prepare a small bowl and put in a handful of peanut Rice for later use.

2.With all the ingredients ready, let’s fry the peanut Rice. Add an appropriate amount of cooking oil to the pan. Pour in the peanut Rice and keep the heat low. Stir-fry the peanut Rice a few times to evenly coat them with oil. Shake the pan constantly to evenly heat the peanut Rice. Stir-fry for about two minutes until the peanut skins crack slightly, then turn to medium heat and stir-fry quickly. The peanut Rice will start to pop and sizzle. Stir-fry until the peanut skins turn slightly yellow, then remove and drain the oil.
3.Next, we will blanch the beancurd bamboo and wood ear fungus. Boil water in a pot, add warm water, beancurd bamboo, wood ear fungus, carrot, and green pepper shreds. As soon as the water boils, immediately pour out and drain the water. Then pour the drained beancurd bamboo and other ingredients into a bowl, and add the minced garlic. Now it’s time to season the dish. Add 2 grams of salt, 5 grams of light soy sauce, 5 grams of vinegar, and 5 grams of chili oil to make the dish red and shiny. Finally, pour in the fried peanut Rice, toss the bowl to mix everything evenly, and then transfer to a serving plate.

Tips

1.Try to choose fresh and tender green vegetables for better taste. You can either grow them in your own garden or buy fresh vegetables from the farm.
2.Blanch the vegetables in hot water to make them more crisp and tender, and to remove some of the raw taste. Do not blanch for too long to maintain the freshness and tender texture of the vegetables.
3.Cut the vegetables into uniform sizes to ensure that they evenly absorb the seasonings during the cold dish process, resulting in a better taste.
