Stir-fried Pork Liver with Garlic Sprouts is a nutritious and delicious home-cooked dish. Pepper powder 2g
Cooking wine 10g
Cornstarch 3g
Garlic 4g
Ginger 3g
Small chili pepper 4g
Pickled Chilli 4g
Garlic sprout 20g
Aginomoto 1g
Sugar 1g
Light soy sauce 5g
Dark soy sauce 3g
Chili oil 5g
Sichuan Pepper 3g

Steps:

1.Soak the pork liver in clean water with salt, wash it repeatedly to remove any blood. Thoroughly clean the liver and then slice it thinly. Try to slice the pieces evenly and place them in a bowl. Add 1 gram of salt and 1 gram of black pepper to the pork liver, mix well. Then add some cornstarch, mix again and let it marinate for 5 minutes. A tip is to mix the seasonings with the pork liver first and then add the cornstarch, which helps to lock in the moisture and make the liver more tender.

2.Now let’s prepare the other ingredients. Chop 5 cloves of garlic into larger pieces, chop a piece of ginger into small bits, and finely chop a few small chili peppers. Cut a small amount of pickled chili pepper into small segments. Put them all in a bowl for later use. Cut a bunch of garlic sprouts diagonally into sections. In a small bowl, prepare the sauce by adding 1 gram of salt, 1 gram of MSG, 1 gram of sugar, 1 gram of black pepper, 5 grams of cooking wine, 5 grams of light soy sauce, a few drops of dark soy sauce, some water, and a spoonful of cornstarch. Mix well. Add cooking oil and chili oil, then mix again. By preparing the sauce in advance, we can save time when stir-frying the pork liver and achieve the goal of quick cooking.

3.With all the ingredients ready, let’s start cooking. Heat the wok, add some cold oil. The oil should be added when the wok is hot to prevent sticking. Add a few Sichuan peppercorns, then add the garlic, ginger, pickled chili pepper, and other seasonings. Stir-fry until fragrant, then add the pork liver. Stir-fry on high heat until the liver changes color, then add the garlic sprouts and stir-fry for a few seconds. Pour the sauce that we prepared earlier into the wok and stir-fry for about 30 seconds on high heat. Now, the delicious and tender stir-fried pork liver is ready to be served.

Tips

1.It is important to choose fresh pork liver. High-quality pork liver should be bright red, have a firm texture, and no odor.
2.Before cooking, slice the pork liver into thin pieces and soak them in saltwater for about 15 minutes, then rinse with clean water. This helps to remove any strong odor and make the liver more tender and smooth.
3.Stir-frying pork liver requires quick and high-heat cooking. Before stir-frying the liver, heat the wok to a high temperature, then add a sufficient amount of oil to evenly coat the bottom of the wok. When the oil starts to smoke, add the pork liver and stir-fry quickly to maintain its tender and smooth texture.
