Ingredients for Black Pepper Pork Chop

Pork Lean 500g
Ginger 7g
Scallion 6g
Coriander 5g
Salt 3g
Pepper powder 1g
Star anise 2g
Sichuan Pepper 3g
Dark soy sauce 4g
Garlic 4g
Starch 3g
Edible oil 100g
Chicken powder 1g
Chili paste 3g
Light soy sauce 5g
Chili oil 3g
Sichuan peppercorn powder 1g
Black pepper powder 5g

Steps:

1.Take a piece of lean pork and press it firmly with your hands. Place the thinly sliced meat in a bowl. Soak and wash the meat slices in clean water to remove any blood, then drain the water. Cut a small piece of ginger into slices, then shred it and mix it with the meat slices in the bowl. Prepare a few stalks of scallions, flatten them and cut them into sections. Take a few stalks of cilantro and rub them in your hands to release the aroma. Add 2 grams of salt, 1 gram of black pepper, a few grains of Sichuan peppercorns, 2 small pieces of star anise, and a few drops of soy sauce to the bowl. Use your hands to knead and mix the ingredients, allowing the meat slices to marinate and absorb the flavors. Take a small piece of ginger, flatten it, and chop it into small pieces. Take a few cloves of garlic, flatten them, and chop them into minced garlic.

2.Prepare a flat plate so that the starch can evenly coat the meat slices. Place a spoonful of starch at the bottom of the plate to ensure that each slice of meat is coated evenly with starch. Use chopsticks or your hands to take out the meat slices one by one and coat them with starch, making sure that each slice is evenly coated with a layer of starch. During this process, be careful not to squeeze the meat slices together, as this will ensure that each slice maintains its shape when fried.

3.Pour an appropriate amount of cooking oil into a pot and heat it to about 50% hot, which is usually indicated by a slight smoke rising from the oil. Take the starch-coated meat slices one by one and place them in the hot oil. Maintain medium heat during this process to prevent the heat from being too high and causing the meat slices to burn. Observe the changes in the appearance of the meat slices. When the outer layer of the meat slices starts to become firm, use chopsticks or a slotted spoon to remove the meat slices from the oil and drain excess oil.

4.Next, start cooking. Heat oil in a wok, then add ginger and minced garlic. Stir-fry until fragrant, then add two tablespoons of water, 1 gram of salt, 1 gram of chicken powder, and 1 gram of Sichuan pepper powder. Stir and dissolve the seasonings with a spoon. Add 5 grams of light soy sauce and a few drops of dark soy sauce to add color, and bring the sauce to a boil. Add the meat slices and a few tied up scallions to the wok. If you like it spicy, you can add a little chili oil for flavor. Cover the wok and simmer for two minutes on low heat. Open the lid, remove the tied scallions, and add a little chili paste for extra spiciness. Continue to simmer on low heat until the sauce thickens. Garnish with chopped green onions in the wok.

5.Take out the meat slices one by one and place them in a serving dish. Pour the sauce evenly over the meat slices, sprinkle with black pepper, and garnish with a sprig of cilantro. The delicious Black Pepper Pork Chop is now ready to be served.

Tips

1.When frying pork, it is important to control the oil temperature. High oil temperature can result in burnt exterior and undercooked interior, while low oil temperature can lead to greasy and not crispy pork. Generally, use medium to low heat for frying and add the pork when the oil temperature is just right. Fry until golden brown.
2.Before frying, marinate the pork for a certain period of time. This allows the seasonings to penetrate the meat better, enhancing the texture and adding layers of flavor.
