Ingredients for Tomato Sea Bass

Bass one

Pepper powder 3g
Cooking wine 13g
Egg one
Cornstarch 4g
Green onion 4g
Ginger 3g

Scallion 2g
Ketchup 30g
Sugar 3g
Essence of chicken 1g

Steps:

1.First, let’s prepare the ingredients. Take one fresh sea bass, remove the scales, guts, and gills, and clean it thoroughly. Cut the sea bass in half from the middle, remove the head, and slice the meat into pieces. Chop the remaining fish tail and bones into chunks and set aside with the fish head. Remove any fish bones from the fish meat and slice it into thin and even pieces.

2.Now, let’s clean the fish. In a bowl of water, add the fish bones and slices and massage them for about a minute to remove any blood. Change the water and add a small amount of salt, then massage again to clean thoroughly. Adding salt helps remove blood from the sea bass and reduce the fishy smell. Next, marinate the fish bones. In a bowl, add 1 gram of salt, 1 gram of pepper, and 5 grams of cooking wine to remove the fishy smell. Mix well and let it marinate for ten minutes. After that, wash the fish slices by hand, removing any excess water.

3.Now, let’s marinate the fish slices. In a plate, add 1 gram of salt, 1 gram of pepper, and 3 grams of cooking wine to remove the fishy smell. Mix well and add one egg white, beating it to evenly coat the fish slices. Adding egg white helps the coating adhere to the fish slices better, resulting in a smoother and tender texture. Finally, add a little cornstarch and mix well. Set aside. Prepare the garnish by cutting a section of spring onion into horse hoof slices, thinly slicing a piece of ginger, and setting them aside with the onion. Cut one tomato in half and then into evenly sized cubes. Cut one stalk of coriander into small pieces and set aside in a bowl.

4.With all the ingredients ready, let’s start cooking. Heat the oil in a pan and slide the hot oil out. Add room temperature oil to the pan and add the marinated fish pieces. Shake the pan continuously to make sure the fish pieces stick to the sides of the pan evenly and heat up without sticking to the bottom. Fry for about a minute over medium heat until both sides of the fish bones turn golden brown and fragrant. Pour out the excess oil. The fried fish bones will have a stronger aroma.

5.Heat another batch of oil in the pan until it reaches medium heat. Add the onion and ginger, sauté until fragrant, then add 30 grams of tomato sauce and stir-fry evenly. Add the diced tomatoes and stir-fry them quickly on high heat to release their juices. Then pour in some water from the side of the pan, and once the water boils, start seasoning. Add 5 grams of cooking wine, a little sugar for flavor, 2 grams of salt, 1 gram of chicken essence, and 1 gram of pepper. Stir to dissolve the seasonings. Then add the fried fish bones to the pan, bring to a boil over high heat, and cook for two minutes. After two minutes, the fish bones will be fully cooked and well flavored. Take them out and place them in a soup bowl.

6.Next, add the marinated fish slices to the pan and cook over medium heat for about 30 seconds until they turn white and are cooked through. Remove the fish slices from the pan. Place both the fish slices and fish bones in the same bowl, then evenly pour the tomato sauce from the pan over the fish slices. Sprinkle some coriander as a garnish, and the delicious Tomato Sea Bass is ready to be served.

1.When selecting the sea bass, look for bright fish eyes, good elasticity in the fish body, and no fishy smell.
2.The cooking time for Tomato Sea Bass should not be too long, as it can easily overcook the fish and affect the texture. It is best to maintain the tenderness and deliciousness of the fish when stewing.
