Stewed Beef with Potatoes:A mouth-watering parental dish

Ingredients for beef and potatoes stew

Beef 500g
Potato two
Carrot one
Ginger 5g
Green onion 6g
Cooking wine 5g
Dried chilli 6g
Star anise two
Ketchup 3g
Rock sugar 2g
Light soy sauce 3g
Salt 3g

Steps:
1.Prepare the ingredients.


2.Cut the beef into chunks, potatoes into cubes, carrots into chunks, slice the ginger, and cut the scallions into segments. Set aside.


3.Add an appropriate amount of water to a pot and bring it to a boil. Blanch the beef in boiling water with a small amount of cooking wine. Skim off any impurities and remove the beef from the pot. Set aside.


4.Heat some cooking oil in a pan. Add the ginger slices, scallion segments, two dried chili peppers, and two star anise. Stir-fry until fragrant.


5.Add the beef back to the pan and stir-fry evenly. Then add two tablespoons of tomato sauce and one tablespoon of rock sugar.


6.Stir-fry until the rock sugar melts and coats the beef with an even layer of tomato sauce. Then add a little soy sauce and stir-fry again.


7.Add the potatoes and carrots to the pan and stir-fry evenly. Add enough hot water to cover the beef. Then add two tablespoons of salt for seasoning.


8.Transfer the entire dish to a pressure cooker and select the stewing function.


9.Once cooked, plate and serve.


Tip
1.Blanch the beef and be sure to use cold water when boiling it. This prevents the meat from becoming tough due to sudden heat. You can also soak the beef in cold water beforehand to remove any blood residue.
2.Adjust the ratio of light soy sauce and dark soy sauce according to personal preference for the desired color of braised dishes. Be mindful of the amount of salt used.
3.Save some extra broth as it can be used to cook delicious beef noodles.
