The recipe for pan-fried and braised streaky pork

Ingredients for braising streaky pork

Streaky pork 800g
Green onion 6g
Ginger 5g
Cooking wine 5g
Edible oil 5g
Beer A bottle
Star anise 2g
Salt 3g
Pepper powder 2g
Rock sugar 3g
Dark soy sauce 3g

Steps:

1.First, prepare the ingredients. Clean 800g of streaky pork and cut it into large pieces of about 5cm. Place them in a bowl for later use. Prepare one stalk of spring onion, wash it clean, and slice it diagonally. Clean a piece of ginger, slice it into thin slices, and then cut it into wide strips for later use.

2.Next, roast the pork skin. Heat up a pan, take out a piece of streaky pork, press the pork skin down on the bottom of the pan and continuously slide it. Roast the pork skin until it turns golden brown, then set it aside. Roasting the pork skin is to remove any remaining hair and unpleasant odor. Repeat this process for the rest of the streaky pork pieces.

3.Now, blanch the streaky pork. Bring water to a boil in a pot, add the streaky pork pieces and 5g of cooking wine. The alcohol in the wine will evaporate and remove any fishy smell. Using cold water in boiling helps to remove any blood from the meat. Once the water is boiling, skim off any impurities. Blanch the streaky pork for about a minute, then remove it from the pot, rinse it clean, and drain the water.

4.Place the cooled streaky pork pieces on a cutting board and carefully slice them into thin and even slices. This step requires some skill and experience to ensure each slice is cut to perfection.

5.Remember not to add cooking oil to the pan. Heat up the pan, then turn it to low heat. Place the pork slices in the pan one by one, without stacking them. Stir-fry the pork slices to remove excess fat. Keep flipping them to prevent them from burning. Once both sides turn golden brown, remove them from the pan and place them in a bowl for later use.

6.Now, use a clay pot to braise the streaky pork. Place the sliced spring onion and ginger at the bottom of the clay pot, add two star anises, and then evenly arrange the fried pork slices in the pot. Pour in a can of beer and enough water to slightly cover the pork slices. The beer helps enhance the flavor and remove any fishy smell. Then, season with 3g of salt, 2g of pepper, a few grains of rock sugar, and 3g of dark soy sauce for coloring. Cover the pot with a lid and simmer on low heat for 40 minutes.

7.After 40 minutes, the pork slices should be tender, flavorful, and well-marinated. Remove the pork slices from the pot and place them on a serving plate. Pour the remaining sauce over the pork slices. This delicious and succulent braised streaky pork is now ready to be enjoyed. Invite your family and friends to share this delightful dish together!
