Steps:

.Slice the green onions, ginger, and garlic. Cut the garlic sprouts into sections and set aside. These seasonings will be used to enhance the flavor and color of the dish. Soak the abalone in salt water for 15 minutes, then wash it and cut diagonal lines on it. This step helps to infuse the abalone with more flavor.

.Clean the shrimp, remove the whiskers and shrimp guns, and set aside. Prepare a pot of cold water, place the shrimp in the pot, add ginger slices and cooking wine, and cook until the water boils. This will remove impurities and enhance the freshness of the shrimp.

.Cut the chicken thighs into pieces, wash them with clean water, and put them in a bowl. Add a spoonful of salt and two spoons of abalone sauce, mix well, and marinate for 15 minutes. This will make the chicken more tender and flavorful.

.Heat some oil in a hot pan, add the sliced green onions, ginger, and garlic, and stir-fry until fragrant. This will add aroma to the dish. Add the chicken to the pan and stir-fry over high heat until the surface is cooked. Then add half a bowl of water, cover the pan, and simmer for 15 minutes. This will make the chicken more tender and juicy.

.After 15 minutes, add the abalone to the pan. At this point, you can add another spoonful of salt, four spoons of abalone sauce, a spoonful of soy sauce, a spoonful of oyster sauce, and a spoonful of white wine. Cover the pan, simmer over low heat for 20 minutes. This will fully extract the flavors of the abalone and chicken, and allow them to blend together.

.After 20 minutes, add the previously prepared shrimp and garlic sprouts to the pan, and stir-fry evenly over high heat. Taste the broth and adjust the seasoning if needed. Finally, when everything is well mixed, remove from heat. Serve the cooked abalone, shrimp, and chicken pot in bowls or on plates, and garnish with some chopped green onions or cilantro as decoration.
