Steps:

1.First, prepare the ingredients. Take two artificially reared bullfrogs, cut off the heads, peel off the skin, remove the internal organs, and trim off the toes. Rinse in clean water to remove any blood. Cut the bullfrogs into evenly sized small pieces and set aside. Marinate the bullfrog by adding 2 grams of salt, 1 gram of pepper, 5 grams of cooking wine to a bowl to remove any fishy smell. Mix in a little cornstarch, mix well, and marinate for ten minutes. Prepare the remaining ingredients: a handful of garlic, remove the ends and set aside. Slice a piece of ginger into thick slices and then cut into small cubes. Cut several dried chili peppers into small pieces, and slice two green and red bell peppers into rings. Cut a few stalks of scallions into sections and set aside. Once the ingredients are prepared, we can start cooking.

2.Add an appropriate amount of cooking oil to a pan. When the oil is about 60% hot and starts to smoke, add the marinated bullfrog to the pan. Quickly deep-fry for ten seconds, then remove and drain the excess oil. The deep-frying will make the bullfrog meat more tender and firm.

3.Leave some oil in the pan. Once the oil is hot, add the prepared garlic and stir-fry until fragrant. Keep the heat low to avoid burning the garlic. Add the green and red bell peppers, ginger, and stir-fry to release the spicy aroma. Add 10 grams of chili sauce, 5 grams of oyster sauce, and stir-fry evenly. Add the fried bullfrog to the pan and stir-fry to coat it with the sauce. Pour 5 grams of cooking wine along the edge of the pan and stir-fry evenly. The preheated cooking wine will evaporate, taking away any fishy smell from the bullfrog. Then pour in an appropriate amount of water from the edge of the pan.

4.Proceed to season the dish. Add 2 grams of chicken powder, 1 gram of pepper, a little sugar, 5 grams of light soy sauce, and 2 grams of dark soy sauce for color. The salt in the sauce is already sufficient, so no need to add more. Stir well and cook over high heat for two minutes. After two minutes, the sauce will become thick and rich, and the bullfrog will be fully cooked and flavorful. Add some water starch to thicken the sauce. Drizzle a little chili oil to add shine to the dish. Stir well and remove from the heat. Transfer the bullfrog to a plate, sprinkle with some scallions for garnish, and serve.
