Ingredients for Shredded pork with green pepper

Pork fillet 500g
Salt 1g
Pepper powder 3g
Dark soy sauce 2g
Light soy sauce 5g
Egg 50g
Starch 20g
Edible oil 10ml
Green pepper 200g
Green onion 10g
Ginger 5g
Cooking wine 5g
Oyster sauce 3g

Steps:

1.Prepare 500g of pork tenderloin and ensure it is thoroughly cleaned. Cut the pork into thin slices, then cut the slices into fine strips. Place the sliced pork tenderloin into a bowl and add enough water. Use your hands to knead and rub the pork strips to thoroughly clean them. Finally, use a strainer or chopsticks to remove the cleaned pork strips and set them aside.

2.In the cleaned pork strips, add an appropriate amount of salt, pepper, dark soy sauce, and light soy sauce. Then crack an egg into the mixture and mix it well with the pork strips. Next, add a suitable amount of starch and stir until evenly coated, enhancing the texture and flavor of the pork strips. Finally, add a small amount of cooking oil and evenly coat the pork strips to prevent sticking. This will help the pork strips maintain their shape and texture during cooking.

3.Prepare 200g of green pepper and cut it into thin strips. Slice some scallions and ginger. In an empty bowl, add salt, cooking wine, oyster sauce, a moderate amount of water, and a tablespoon of starch. Mix well. Then add dark soy sauce and cooking oil, stirring until well combined.

4.Heat oil in a pan, stir-fry the marinated pork strips until they change color, and then set them aside. Heat another pan with oil until it reaches 120 degrees Celsius, then add the green pepper strips and continue stir-frying. When the green pepper becomes soft, add the pork strips and continue stirring. Finally, pour in the prepared sauce, stir-fry on high heat for 30 seconds, and then serve.

Tips:

  1. Pre-treating the meat: If using meat slices to make the pork strips, you can marinate the slices before cutting. Add an appropriate amount of salt, cooking wine, and starch, mix well, and let it sit for 10-15 minutes. This will make the meat more tender and juicy, preventing the pork strips from becoming tough during cooking.
  2. Stir-fry with high heat: Use high heat for quick stir-frying. This will help maintain the crisp texture and vibrant color of the green peppers. Stir-fry quickly to avoid overcooking and making the green peppers too soft.
