The recipe for Stir-fried Pork with Scallions

Ingredients for Stir-fried Pork with Scallions

Pork Lean 400g
Green onion 40g
Red pepper 8g
Salt 3g
Chicken powder 2g
Sugar 2g
Pepper powder 1g
Cooking wine 3g
Egg one
Starch 3g
Edible oil 8g
Light soy sauce 3g
Sesame oil 4g

Steps:

1.First, let’s prepare the ingredients. Take a piece of  pork lean and observe the texture. Try to cut the pork against the grain, making the meat strips more neat. Place the pork on a cutting board and use a sharp knife to slice it into thin slices, then cut the slices into fine strips.

2.Place the sliced meat strips in a bowl. Add 1 gram of salt, 1 gram of chicken powder, 1 gram of white sugar, and 1 gram of pepper. Add a little cooking wine. Adding a small amount of cooking wine during marinating can help remove any fishy smell and enhance the flavor, but don’t use too much as it may not evaporate completely. Then add an egg white and mix the seasonings with your hands, stirring in one direction to coat the meat strips evenly. Coating the meat strips with egg white helps to keep them from losing their coating and gives them a tender texture. Add a little cornstarch and continue stirring vigorously for about two minutes. Finally, add a small amount of cooking oil to prevent the meat strips from sticking together. Let the meat marinate for ten minutes to absorb the flavors.

3.While the meat is marinating, let’s prepare the other ingredients. Take two scallions, cut them open in the middle, and then slice them diagonally into thin strips. Place the scallion strips in a bowl. Cut half of a red pepper into thin strips and add them to the bowl with the scallions. Once all the ingredients are ready, let’s give the meat strips a quick blanch in hot water.

4.Heat oil in a pan over medium heat. Once the oil is heated to around 40% hot, reduce the heat to low. Add the meat strips and quickly blanch them to remove any stickiness. Use a spoon to gently separate any clumped meat strips. The blanching process should not exceed one minute. Once the meat strips turn white, remove them from the oil and drain off excess oil.

5.Heat oil in the pan over high heat. Add the scallion and red pepper strips and stir-fry quickly to release the fragrance of the scallions. Add the blanched meat strips and stir-fry for a few seconds. Remove the pan from the heat, add 2 grams of salt, 1 gram of white sugar, 1 gram of chicken powder, and a drizzle of light soy sauce to enhance the flavors. Stir-fry for 30 seconds, then just before removing from the heat, drizzle a little sesame oil to enhance the color. Transfer to a serving plate. Your delicious stir-fried meat with scallions is ready to be enjoyed.
