Ingredients for Stir-Fried Pork Liver with Garlic Sprouts

Pork liver 500g
Cooking wine 10g
Pepper powder 1g
Cornstarch 20g
Garlic 5g
Ginger 5g
Small chili pepper 3g
Salt 2g
Garlic 300g
Aginomoto 1g
Sugar 1g
Light soy sauce 5g
Dark soy sauce 2g
Edible oil 3g

Step:

1.Soak the pork liver in clean water and add a moderate amount of salt. Gently stir the pork liver with your hands to mix the salt and water thoroughly, helping to remove any blood residues. Rinse and gently rub the pork liver until the blood is completely washed away. This step helps eliminate any unpleasant odor or bloody taste, ensuring that the pork liver is clean and tender.

2.Remove the soaked and cleaned pork liver from the water and slice it thinly. You can adjust the thickness according to personal preference and cooking requirements. Thinly sliced pork liver is easier to cook and chew. Make sure to use a sharp knife for easy and even slicing, ensuring that the slices are uniform and neat, allowing them to be heated and seasoned evenly during cooking. Once the slicing is done, proceed with the next steps of cooking or preparation.

3.Place the sliced pork liver in a bowl. Add 1 gram of salt, 1 gram of black pepper, and 5 grams of cooking wine. Mix well to ensure that the seasonings cover the pork liver evenly. Next, add a suitable amount of cornstarch (adjust according to the quantity of pork liver), and gently massage the pork liver to evenly coat it with starch, enhancing its texture and absorption ability. Marinate for 5 minutes, allowing the flavors to fully penetrate the pork liver, enhancing its taste and texture.

4.Prepare minced garlic, chopped ginger, and diced chili peppers. Peel the garlic cloves and chop them into small pieces by lightly pounding with the back of a knife. Similarly, peel the ginger and dice it into small pieces, ensuring they are evenly sized. For the chili peppers, you can choose to remove the seeds or keep them, then dice them into small pieces. Trim the garlic sprouts, cut off the roots, and then cut them into sections of appropriate length at an angle, adding visual appeal and texture to the dish.

5.Prepare an empty bowl and add 1 gram of salt, 1 gram of MSG, 1 gram of sugar, 1 gram of black pepper, 5 grams of cooking wine, 5 grams of light soy sauce, and 2 grams of dark soy sauce. These seasonings will impart rich flavors and enhance the taste and texture of the dish. Next, add a suitable amount of water (adjust as needed) to dissolve and distribute the seasonings evenly in the water. Then, add a suitable amount of starch (adjust as needed), stir well to slightly thicken the sauce. Finally, add a small drop of cooking oil, stirring well to enhance the aroma and sheen of the sauce.

6.Heat the pan with oil, then add minced garlic, ginger, etc., and stir-fry until fragrant. Add the pork liver and stir-fry over high heat until it changes color. Then add the garlic sprouts and continue stir-frying. Finally, pour in the prepared sauce and stir-fry over high heat for about 30 seconds before removing from heat.

Tips:

  1. Preparing the pork liver: Before slicing the pork liver, you can soak it in clean water with a moderate amount of salt to remove blood residues. This step helps make the pork liver cleaner and more tender.
  2. Serve immediately: Once the stir-frying is done, quickly transfer the dish to a serving plate to prevent overcooking, which may result in loss of tenderness in the garlic sprouts and pork liver. Enjoying them while they are still juicy and flavorful is the best way to savor this dish.
