Silken tofu 200g
Scallion 4g
Coriander 4g
Egg one
Salt 2g

Steps:

1.First, let’s prepare the ingredients. Take 200 grams of Silken tofu and cut it into thin slices about 0.5 centimeters thick. Arrange the slices neatly, then cut them into even strips and dice them. Place them in a bowl and set aside. Chop two stalks of scallions and a small handful of cilantro into small pieces and place them in a small bowl. Prepare another small bowl, crack an egg white into it, and quickly beat it with chopsticks to remove air bubbles.

2.With the ingredients ready, let’s blanch the tofu. Bring water to a boil in a pot, pour in the diced tofu with cold water, and once the water boils, pour out the tofu and drain it. Blanched tofu removes the beany aroma and gives it a firmer texture.

3.Next, let’s start cooking. Bring water to a boil in the pot again and pour in the diced tofu. Once the water boils, start seasoning. Add 2 grams of salt, 1 gram of chicken essence, and simmer over low heat for two minutes. After two minutes, the tofu is already flavorful. Add a spoonful of prepared water starch to thicken the soup. Stir well and simmer until it boils.

4.When the water boils, remove the pot from heat or turn off the heat to prevent the soup from boiling. At this point, pour in the egg white. Boiling and simmering soup would break the egg white into small pieces. Once the egg white is added, cook until it solidifies, then remove from heat.

5.Sprinkle the chopped scallions and cilantro into a soup bowl, then pour in the cooked tofu soup. Add a few drops of sesame oil. The Egg and Tofu Soup is now ready.

Tips

1.Use fresh eggs and Silken tofu. Fresh eggs have a better texture, and Silken tofu will be more delicate.
2.When cooking the tofu, you can add a little salt to the water beforehand. This will help the tofu absorb more flavor.
