Ingredients for Stewed beef in sour soup

Sauerkraut 100g
Green pepper 50g
Small chili pepper 30g
Needle mushroom 100g
Beef slices for hot pots 200g
Green onion 20g
Ginger 10g
Garlic 10g
Essence of chicken 3g
Salt 3g
Soy sauce 5ml
Oyster sauce 3g
Cooking wine 3ml
white vinegar 3ml
Cooked sesame 5g

Steps:

1.When preparing the pickled vegetables, start by washing them thoroughly to remove any dirt or impurities. Then, cut the pickled vegetables into small pieces for better integration in the cooking process. Similarly, prepare the green and red peppers by cutting them into suitable-sized segments to add color and texture. These preparations ensure that the ingredients are easy to cook and that every bite captures the unique flavors of the pickled vegetables, peppers, and chili.

2.Bring a pot of water to boil, making sure there is enough water to cover the enoki mushrooms. Once the water boils, add the enoki mushrooms and cook them for a few minutes. The cooking time may vary based on personal taste preferences, but generally, a few minutes will suffice. When the enoki mushrooms become soft and vibrant in color, remove them from the pot using a strainer or chopsticks. This method retains the tender texture and preserves the original deliciousness of the enoki mushrooms.

3.In another pot, bring a fresh batch of water to boil, ensuring that there is enough water to cover the beef rolls. Once the water reaches a boiling point, place the beef rolls into the pot. The blanching time for the beef rolls may vary depending on personal preferences, but typically only a few minutes are needed. When the beef rolls change color and become tender, remove them from the pot using a strainer or chopsticks and set them aside. This process ensures that the beef rolls maintain their succulent texture and are more easily infused with flavors during subsequent cooking.

4.Heat oil in a wok or pan, then stir-fry ginger and garlic until fragrant. Next, add the chopped pickled vegetables and quickly stir-fry to fully incorporate them with the ginger and garlic. Pour in an appropriate amount of water, enough to cover the pickled vegetables. Add seasonings such as chicken powder, salt, sugar, soy sauce, oyster sauce, and cooking wine to taste, adjusting according to personal preferences. Finally, add a suitable amount of white vinegar to enhance the sour flavor of the pickled vegetables. Through these steps, the pickled vegetables can better absorb and blend with various seasonings, resulting in a rich taste and layered flavors.

5.Once the soup in the pot comes to a boil, add the cooked enoki mushrooms and beef rolls into the boiling soup to heat them through. Then, add the sliced green and red peppers and toasted sesame seeds, allowing these ingredients to fully blend and release their aromas by continuing to cook for a while. Lastly, just before serving, evenly pour the hot oil over the Sour Soup Beef to enhance its aroma and taste. After careful execution of these cooking steps, the tangy and flavorful Sour Soup Beef is ready to be enjoyed!

Tips:

  1. Balancing acidity and sweetness: Adjust the ratio of vinegar and sugar according to personal taste preferences to achieve a balance between acidity and sweetness. The right amount of sourness and sweetness enhances the deliciousness of the dish.
  2. Drizzling hot oil: When drizzling hot oil as the final step, it elevates the aroma and taste of the dish. Pour the oil evenly over the surface of the dish to make it more appealing.

When Stewed beef in sour soup is served, a burst of sour aroma fills the air, leaving one’s mouth watering. The strong fragrance of the sour soup intertwines with the tenderness of the beef, creating a unique combination of flavors and layers. Like an artistic masterpiece, Stewed beef in sour soup displays vibrant colors.
