The ingredients of Fengwei bitter gourd

Bitter melon 200g
salt 2g
suger 3g
White vinegar 5g
Sesame oil 3g

Steps:

1.Prepare a fresh bitter melon. Remove the two ends, then cut the bitter melon into four sections. When removing the seeds, be careful not to break the sections, as the seeds may affect the overall taste. Gently scrape the seeds away with a knife, then wash the sections clean with water.

2.Lay the bitter melon flat on a cutting board to ensure it won’t move during cutting and for accurate slicing. Use a diagonal knife to slice the bitter melon at intervals of 1cm without cutting through, to make it easier to cook and season during cooking. Finally, slice the bitter melon into thin threads with a thickness of about 3cm. This way of cutting will make the bitter melon easier to cook while also enhancing its overall texture and taste.

3.Soak the sliced bitter melon in water for 5 minutes to remove its bitterness, while also preserving its color and texture. Stir gently in the water to speed up the effect. After 5 minutes, remove the bitter melon and drain the water, then proceed to the next cooking step.

4.Chop the garlic into small pieces and dice the chili peppers. Put them into a bowl. Then add 2g of salt, 3g of sugar, 5g of vinegar, and 3g of sesame oil. Stir gently with chopsticks to mix well. This flavoring combination will enhance the taste of the bitter melon and make it more delicious.

5.Pour the seasoned sauce over the soaked bitter melon and stir gently with chopsticks to evenly mix, allowing the bitter melon to fully absorb the flavorings. Finally, plate up the Fengwei Bitter Melon and serve it as a refreshing dish!

Tips:

  1. Soaking: Soak the sliced bitter melon in water for 5 minutes to remove its bitterness and preserve its color and texture.
  2. Stirring: Gently stir the seasoned sauce and bitter melon together with chopsticks to evenly mix them.
