Chicken feet 500g

Rock sugar 10g

Dried chilli 5g
Star anise 3g
Cinnamon bark 4g
Fragrant leaves 5g
Salt 4g
Dark soy sauce 5g
Soy sauce 4g
Sesame 6g

Steps:

1.Firstly, prepare a pot of cold water and add the chicken feet along with green onion segments, ginger slices, and a tablespoon of cooking wine to remove any unpleasant odor. Bring it to a boil over high heat, skimming off any impurities that rise to the surface. Once there is no more blood coming out, remove the chicken feet and rinse them thoroughly with clean water. This step aims to make the chicken feet cleaner and remove any blood or impurities.

2.Next, we’ll start caramelizing the sugar. Heat some oil in a pan over low heat and add a few pieces of rock sugar. Stir gently with a spoon until the sugar melts completely. Watch the color change closely – once the rock sugar turns amber, quickly add the chicken feet and stir-fry evenly, ensuring each piece is coated with caramel. This step is to give the chicken feet an enticing red color and enhance the appearance and texture of the dish.

3.Then, add minced garlic and dried chili to the pan, followed by star anise, cinnamon, and bay leaves, which will impart a special aroma to the chicken feet. Add a tablespoon of salt, a tablespoon of dark soy sauce, and two tablespoons of soy sauce. Stir-fry evenly to allow the chicken feet to absorb the flavors. Be cautious not to use too high heat to avoid burning the seasonings. Pour enough water into the pan to cover the chicken feet, cover with a lid, and simmer over low heat. The simmering time is 30 minutes, during which the lid should not be lifted to prevent the loss of fragrance. Occasionally turn the chicken feet during the simmering process to prevent the bottom from sticking. This step aims to ensure the chicken feet fully absorb the flavors of the broth, making them more delicious.

4.After 30 minutes, remove the lid and observe the consistency of the broth. If there is still a lot of liquid, increase the heat and reduce it until the broth thickens. Be careful with the heat to prevent burning. When the broth becomes red, glossy, and thick, turn off the heat. Transfer the chicken feet to a serving plate and sprinkle some white sesame seeds for visual appeal and added texture.

1.Prior to stewing, blanch the chicken feet in boiling water to remove impurities and residues from the surface. Rinse them thoroughly with cold water afterward.
2.Choose a low heat setting for simmering the chicken feet. This allows them to fully absorb the flavors of the sauce while maintaining their tender and smooth texture.
3.If you enjoy spicy flavors, you can add an appropriate amount of chili powder or Sichuan peppercorn powder during the stewing process to enhance the spiciness of the chicken feet.
