It not only provides nutrition but also enhances appetite, leaving one craving for more. In the world of gastronomy, Egg Tofu Soup stands as an everlasting classic.

Ingredients for Egg Tofu Soup:

Egg 150g
Freshwater shrimp 50g
Silken tofu 60g
Cooking wine 2g
Oyster sauce 1g
Salt 1g
Chopped green onion 3g
Pepper powder 1g
Sesame oil 4g

Step:

1.First, prepare a small bowl. Crack 3 eggs into the bowl. Here, you can choose to separate the egg yolks and whites using an egg separator and only use the yolks to make a smoother tofu soup. Next, add about 1 gram of salt to the eggs. Salt enhances the flavor of the eggs and makes them more delicious. Add a few drops of sesame oil. The aroma of sesame oil brings a unique flavor to the tofu soup. Pour in approximately half a tablespoon of water. Adding water makes the eggs more tender. You can adjust the amount of water according to your preference for texture. Then, use chopsticks or an egg beater to whisk the eggs and water together, ensuring they are thoroughly blended. The whisking process can continue for a while to ensure the eggs and water are evenly mixed, creating a smooth mixture.

2.Prepare several fresh shrimp. Gently twist off the shrimp heads and peel off the shells with your hands. Then, make a shallow cut along the back of each shrimp with a knife, remove the vein, and rinse the shrimp clean. Place the cleaned shrimp in a bowl. To ensure cleanliness, you can add clean water to the bowl and wash the shrimp meat multiple times. Rinse a few times until there are no residues in the water. Put the cleaned shrimp back into the bowl. Add 2 grams of cooking wine, 1 gram of oyster sauce, and 1 gram of pepper. Gently stir with chopsticks to evenly coat the shrimp with the seasonings, allowing them to marinate.

3.Cut a piece of silken tofu into thick slices and place them in a bowl. Next, pick up a slotted spoon and evenly pour the beaten eggs over the tofu. This helps reduce the formation of bubbles and ensures that the tofu is fully covered by the eggs. By using a slotted spoon, you can have better control over the flow and distribution of the eggs, ensuring they cover the entire surface of the tofu evenly. This method enhances the appearance of the tofu slices and allows the egg mixture to penetrate into the tofu, adding a rich texture. Remember to pour the egg mixture evenly over the tofu and try to avoid large air bubbles.

4.Add an appropriate amount of water to a pot and bring it to a boil. Once the water is boiling, place the dish with the eggs and tofu into a steamer. Set the heat to medium, cover the pot, and start the steaming process. Maintain a steady heat and steam for 8 minutes. This duration is enough to thoroughly cook the eggs and tofu and allow them to blend together. After 8 minutes, carefully lift the lid and add the large shrimp to the steamer. Cover the pot again and continue steaming for an additional 2 minutes. This will quickly cook the shrimp and create a delightful combination of flavors and textures with the egg tofu soup. Note that during the steaming process, ensure the pot lid is tightly closed to maintain steam circulation inside the pot and prevent any burns from hot steam.

5.After 2 minutes, turn off the heat and carefully remove the finished egg tofu soup. Be cautious not to burn your hands with the hot steam. For added visual appeal and texture, you can garnish with a small handful of chopped green onions. Serve this delicious egg tofu soup and get ready to enjoy!

Tips:

1.Choose silken tofu and try not to mash or stir it too much. Cut the tofu into even small pieces to maintain its shape and texture, making the soup more visually appealing.

2.Use gentle heat when cooking the egg tofu soup to avoid high temperatures that may cause the tofu to break apart.

Egg tofu soup is a nutritious and silky-textured delicacy. When the tender white tofu combines with the golden eggs, it creates a beautiful picture. The steaming hot soup releases a subtle aroma, instantly bringing a sense of warmth and comfort. Scooping up a spoonful of egg tofu soup delights the senses with its delicate texture and delicious taste. In this cold winter season, a bowl of egg tofu soup is like a ray of sunshine, providing warmth and hope.
