Steps:

1.Cut the green and red bell peppers into rings using a knife, then set them aside in a bowl. Finely chop the garlic and ginger separately, either by using a knife or crushing them with the back of a knife to make them more delicate.

2.Clean the chicken thoroughly, removing any remaining tendons and fat, then cut it into small cubes. The size of the cubes can be adjusted according to personal preference. Place the chicken cubes in a bowl. Add an egg white, a tablespoon of cooking wine, and a tablespoon of soy sauce. Mix everything well with your hands. The purpose of this step is to allow the chicken to absorb the flavors from the marinade, while also enhancing the texture and tenderness.

3.Prepare the sauce mixture. Mix together a tablespoon of salt, two tablespoons of soy sauce, a tablespoon of dark soy sauce, a tablespoon of vinegar, a tablespoon of tomato sauce, and a tablespoon of cornstarch. Stir-fry them over low heat until fragrant, then add the fried chicken pieces and the previously prepared sauce mixture. Stir-fry everything over medium heat until the chicken is fully flavored.

1.Choose chicken breast or thigh meat, remove any tendons, and cut into evenly sized cubes. This ensures a tender and smooth texture.
