Ingredients for Garlic Spare Ribs

Pork ribs 500g
Baking powder 7g
Salt 5g
Pepper powder 1g
Cooking wine 10g
Sweet bean sauce 5g
Fermented bean curd 5g
Garlic 23g
Ginger 7g
Egg one
Cornstarch 8g

Steps:

1.Firstly, we need 500 grams of spare ribs, which should be cut into evenly sized small pieces for easier cooking and consumption. Place them in a large bowl and add a spoonful of baking soda to help remove any blood. Add two tablespoons of salt and gently wash the ribs with your hands, squeezing out as much blood as possible. After rinsing, transfer the ribs to another bowl for the next step of marination.

2.In the bowl, add two grams of salt, one gram of pepper, 10 grams of cooking wine, five grams of sweet bean sauce, and a piece of fermented tofu. Mix these seasonings together, ensuring that every piece of rib is evenly coated.

3.Next, prepare garlic, ginger, and scallions for making garlic paste. Slice a handful of garlic and a piece of ginger, then cut a section of scallion into small pieces. Put these ingredients into a juicer along with some water, and blend them into garlic paste.

4.Pour the prepared garlic paste into the marinated spare ribs and mix well with your hands, ensuring even coating. Cover the bowl with plastic wrap and let the ribs marinate for two hours, allowing them to absorb the flavors. After two hours, crack an egg into the bowl and mix it thoroughly. Add some cornstarch while stirring in the same direction to lock in moisture and achieve a smooth and tender texture. Once the ingredients are ready, start frying the ribs.

5.Heat oil in a pan until it reaches about 50% of its maximum temperature. Add the ribs one by one and fry them over low heat for about 5 minutes, continuously moving them around to ensure even heating. After 5 minutes, when the ribs are cooked through and crispy, increase the oil temperature to about 60%. Briefly refry the ribs for around 20 seconds before removing them from the pan to drain excess oil. This step removes extra oil from the ribs, reducing greasiness and making them golden and crispy. Arrange the fried spare ribs on a plate and they are ready to be served.

Tips

1.Marinate the spare ribs in advance for at least one hour to enhance their flavor and improve the taste.
2.When the oil temperature reaches about 60%, start frying the spare ribs. Place them into the pan one by one, using medium heat, and fry for approximately 10 minutes before removing them to drain excess oil.
3.Once the oil temperature is hotter, return the previously fried spare ribs to the pan for a second frying. This double-frying technique will create spare ribs that are crispy on the outside and tender on the inside, making them exceptionally delicious.
