Ingredients for Fiery Spicy Hotpot:

Chicken wings 100g
Mangrove crab 80g
Freshwater shrimp 80g
Chopped green onion 5g
Salt 6g
Cooking wine 4g
Dark soy sauce 2g
Light soy sauce 6g
Sugar 2g
Ginger 5g
Garlic 5g
Onion 20g
Potato 30g
Carrot 30g
Chili powder 3g
Ketchup 2g

Step:

1.The chicken wings are cleverly transformed into “花刀,” which involves cutting slits in the meat to enhance flavor absorption. The green shrimps are deveined and opened at the back, then marinated with a teaspoon of salt and a tablespoon of cooking wine to remove any fishy smell. These preparations make the chicken wings and shrimps more flavorful and delicious during the cooking process.

2.Next, prepare the stewing sauce. In a bowl, combine a teaspoon of salt, a tablespoon of dark soy sauce, three tablespoons of light soy sauce, a tablespoon of sugar, a tablespoon of tomato sauce, and three tablespoons of bean paste. Mix gently with chopsticks to ensure all the seasonings are well blended.

3.Heat oil in a wok or pan. Add sliced ginger and garlic, allowing their fragrances to infuse into the hot oil. Then stir-fry the sliced onions, bringing a unique sweetness and crisp texture. Followed by the cubed carrots and potatoes, imparting rich vegetable flavors to the dish. Lastly, add a tablespoon of chili powder and a tablespoon of salt, enhancing the taste of the vegetables while adding a touch of spiciness and saltiness for an even more delightful flavor.

4.Pour a bowl of water into the pot, then carefully wash the prepared tender crabs and add them to the pot. Next, add the seasoned chicken wings and shrimps. Finally, pour the prepared stewing sauce over the ingredients. Turn up the heat to high, cover the pot, and let it simmer on medium-low heat for 30 minutes. During this time, the chicken wings, shrimps, and crabs will become deliciously cooked while releasing their tantalizing aromas.

5.After 30 minutes of simmering, wash and slice the green and red bell peppers. Open the pot and add them to the dish. The addition of the bell peppers enriches the flavor and adds vibrant colors to the stew. Continue simmering over medium-low heat for another 10 minutes, allowing the flavors of the bell peppers to fully infuse into the chicken wings and shrimp meat.

6.After 10 minutes of simmering, open the pot and sprinkle chopped green onions over the dish. Then turn off the heat. The aroma of the green onions immediately fills the space, whetting your appetite. Finally, transfer the stewed delicacy onto a serving plate, and you have a beautifully presented dish that is full of color, fragrance, and taste.
